Sweet Potato Gnocchi

I was so excited about this dish but it ended out not that great. The nutmeg does not work well. Maybe it would be better without it.

Brazilian Coffee Cookies

These cookies were fabulous! I altered the recipe a bit to suit our tastes. I added a little butter so they wouldn't be so cakey.And then I added 3 1/2 tbsp. of fresh ground coffee instead of 2 tbsp. of instant. Yummy!

Curried Rice Pilaf

This recipe is absolutely amazing! I made this dish for dinner with our Christmas goose. They complemented each other perfectly! Also, my husband and sister-in-law said they didn't like curry. But they loved this! They both said it was their favorite side dish!

West Indian Curried Chicken

YUM! But instead of browning the chicken, I put everything in a large pot and let it simmer for about two hours. I used crushed red pepper instead of hot pepper sauce. I also threw in some lentils as an afterthought. The potatoes cooked down and the chicken absorbed the curry flavor. DElicious! My husband, who is not a big curry fan, thought it was fantastic!
