Raspberry White Chocolate Mousse

I thought this original version came out a little too airy and not enough like a thick mousse, so I added 'maitorahka' which is like whipped milk curd. I would have perhaps added more raspberry to the mousse as well.

Easy Vegan Whole Grain Pancakes

A bit thicker than non-vegan pancakes, but still very tasty! The cinnamon is a perfect touch, and if you're adventurous, might like to try a bit of nutmeg as well.

Vegan Lemon Poppy Scones

Although these were in fact quite tasty, they are not scones. I substituted sunflower seed oil for the margarine. The liquid is far too much for the recipe. Either add a little at a time, or be prepared to add more flour later.

Stewed Cabbage

A fairly simple recipe that fits the bill and is conveniently vegan. Somewhat bland, although can be spiced up with additional vinegar (rosewine or basalmic worked well) and a bit of sugar.

Mediterranean Black Olive Bread

Just as described. Wonderful. I would next time turn the temperature down after 10 minutes instead of 15, because I found that the crust got too dark, which misled me into taking the bread out a little too early. I put it back in the oven for the remainder of the time, but it was still a bit undercooked in the middle.

Soft Gingersnaps

I took these cookies to a holiday party and they were gone within 20 minutes. I've recieved many compliments. I used less sugar and less molasses than called for, because it was all I had left, but they were still perfect. In fact, when I make these again I will use a bit less still.

Mrs. Sigg's Snickerdoodles

My first time baking these traditional favorites was a success. I can't find shortening in Finland (is there a substitute?), so I used a whole cup of butter instead. I also substituted vinegar for the cream of tartar (also cannot find in supermarkets here). Otherwise, the suggestions of using a bag to shake the dough balls in and using exactly 8 minutes in the oven were perfect. They may not LOOK done, but if you want them to be slightly chewy on the inside, take them out despite that they aren't browned. Trust me.

Yeast Doughnuts

Very good. I probably could have let them rise a bit longer to make them fluffier, though- the next day they were a bit hard already. I used the suggestion of using confectioner sugar and milk to make an icing, but I also used about half confectioner sugar, half chocolate milk mix. I only wish I had waited until the doughnuts were cool before dipping them into the icing, because the icing melted on them right away, covering the overall doughnut rather than making a nice-looking icing. Overall, very satisfying.

Enchilada Casserole II

I followed suggestions of others an made a few additions: red and yellow bell peppers, pinto beans, sour cream (in a layer of it's own). Also, I substituted soy ground beef, so it required a beef bullion cube to boost the beef flavor. My boyfriend commented three times that it was a 'great dish' :) I would have liked to figure out how to make the flour tortilla shells a bit crispier as the layers inside. Baking lightly first?

Creamy Hollandaise Sauce

Very easy to make. Didn't have a double boiler, but a metal bowl on top worked fine. Margerine makes a perfect substitute for butter. I would also add less lemon and perhaps more white pepper.

Flax and Sunflower Seed Bread

This recipe was so easy to make, even without a bread maker OR blender. It only took about 5 minutes to mix and knead all of the ingredients and let it rise. A nice nutty flavor when toasted, as previously commented. I didn't use wheat flour, since I didn't have any, and it still came out great. Thanks!
