Puff Pastry Salmon

I made my own puff pastry from the puff pastry recipe on this site. Since I didn't have any onion or garlic powder, I skipped it. I didn't need it! I added about a teaspoon of cream cheese to the top and cooked it for about 35 min on 400F. Great recipe.

Honey Oatmeal Bread II

A nice texture, very easy to cut with few crumbs as result. Even better toasted. The oatmeal just dissolved in this recipe! It was a little too sweet to use with most sandwiches, but made great breakfast bread. Also, I tried putting all the dough into one bread loaf pan (only have one and many times the loaves turn out too small if I put in two), but this one really does need two loaf pans or should be halved! I got a huge loaf of bread, some of which spilled over to the bottom of the oven during baking.

Almond, Apple Cinnamon Scones

True to the nature of scones, these scones were dense and a bit dry after the first day. I found they could use a bit more flavor, and plan to use more vanilla sugar and cinnamon next time. I also grated the apples into the batter.

Spiced Apple Bars

These bars were acceptable to serve at a big informal party. However, they were a bit dry and lacked some presentability. I made a maple syrup icing out of syrup and confectioner sugar. I also used a smaller pan, so the bars were a bit thicker, and more like a cake. I used 2 cups of chopped apple and it still could have used more!

Apple Bavarian Torte

Mediterranean Vegetable Stew

Very tasty and easy. I would recommend also to 'weep' the eggplant with salt before adding. I rinsed the eggplant off before adding to the rest, because I don't like too much salt. I didn't have mushrooms, but followed the rest. Very very tasty. (Served over pasta because my quinoa wasn't soaked long enough)

Fig and Goat Cheese Pizza

Great gourmet flavor pairing. I made mine into a main course pizza by adding some plain tomato sauce, with tomato paste, garlic and a pinch of sugar, and adding a light sprinkling of mozzarella before layering the fresh fig slices, goat cheese, and red onions. The fennel added something special, although this flavor is not for everyone (boyfriend didn't like the fennel, but said it would be great without it). As for the pizza dough, I cannot rate, because the boyfriend made his own special dough.

Maple Sugar Cookies

Good cookies overall. I would have liked a more maple flavor, so I wonder where I can get some of this maple extract other reviewers mentioned? I also added raisins to the recipe, and might add oats as well next time. The cookies need more texture, or are too sweet. Took them to a birthday party and they were gone before the second round of guests arrived.

Dark Rye Bread

Good bread. Nice and dense. I used whole wheat flour in place of the all purpose flour, used more syrup in place of the brown sugar, and omitted the caraway seeds because I didn't have any. I thought the bread a bit too sweet, and would perhaps half the second portion of brown sugar/syrup in the future. If not enough liquid, add a tablespoon of water when mixing.

Avocado, Beet and Arugula Salad with Chevre Tartine

Great salad dressing. Some variations: I used regular lettuce, since I didn't have arugula, sunflower seeds that I toasted in the oven while I was making the tartines, and added about a teaspoon of the beet juice to the dressing. I felt the salad lacked texture, so half way through eating, added cucumber slices. Also, I'm not sure the basil is a great compliment of the other flavors. I don't know what would be better, but I was a little turned off by the combination of goat cheese and basil.

Italian Herb Bread I

This was an ok recipe. It calls for so much flour and oil, yet not enough herbs. The flavor was a bit bland and the bread got stale very fast, even inside a bread tupperware. I might use fresh garlic and onions next time, if I were to attempt a modified version of this recipe.

Grandma's Lemon Meringue Pie

Perfect. Followed the recipe to a tee, except that I added extra sugar while whipping the egg whites, because I thought that would help firm it faster (it didn't). The result of this blunder were cute little caramelized beads of sugar on top of the meringue. There was some liquid between the layers, but nothing that can't be drained by tipping the pie over a sink! A bit of work with the topping, but delish and impressive for guests!

Health Nut Blueberry Muffins

These were very healthy. In the end, I added ground flax seed, and halved the amount of sugar. The frozen berries turned the batter purple. They were good for the first day or two, but got sticky and the texture was not very pleasant. If I made these again, I would use no oil and fresh blueberries.

Kid-Friendly Wheat Bread

Many compliments on this bread recipe. Minor changes> molasses instead of brown sugar when feeding the yeast in the first step (easier to mix), half wheat and half all purpose flour. In the future, I will make this with 3/4 of the dough in one bread pan, and use the leftovers for dinner rolls, as each half did not make such a large loaf as I like for slicing for sandwiches.

Savory Sausage, Cheese and Oat Muffins

Very good recipe. I made some changes based on availability and preferences. I didn't have garlic or onion powder, but used a tablespoon of French onion soup mix (the powder instant kind), I used plain yogurt instead of buttermilk in the same volume, two real eggs, and butter instead of margarine. I also made my own vegetarian sausage first (soy protein, water, egg, wheat flour, sage, time, spices). My boyfriend doesn't like them, but I love them dipped in a little ketchup or with butter.

Highway Cafe Chess Pie

Easy to follow. Got rave reviews from my Finnish inlaws. I used only one cup of raisins and half cup of walnuts (all I had), and boiled water to just pour over the bowl of raisins, rather than actively boiling the raisins. Worked great. Served with vanilla sauce, but next time I might serve with vanilla ice cream or caramel sauce.

Tangy Pear and Blue Cheese Salad

I loved this salad, but I have to give it only 4 stars because the dressing calls for way too much oil and sugar. I used only 1/4 cup and only half cup of olive oil. There was more dressing than needed, but we added it as we desired. My boyfriend and I decided this was the kind of salad we should make the next time we have guests for dinner.

Black Bean Salsa Soup

This soup was very good. I left out the butter, and added the vegetables to the soup only after I had the beans (I used dried black beans) were soft and ready. I pureed the black beans lightly in the stock, and then added the remaining ingredients. I left out the celery and cayenne pepper, because I didn't have any and used paprika instead. I might have used beef bullion instead. Overall, tasty and healthy.

Bavarian Strawberry Pie

Simple to make. I used 'cool whip' instead of real whipped cream to cut back on calories and it was fantastic. My friends (mostly all dieting) said 'heck with it, we want seconds!

Maple Salmon with Mushroom Couscous

I give tihs recipe 5 stars because of its simplicity and how the tastes compliment one another to make a meal. My boyfriend thought it was the same recipe I have used for salmon before, but in fact the last time I made a similar dish, the I used honey, pineapple juice, soy sauce, worchestershire, ginger, amongst other things. This cut back to the essentials! I used only the stems of the mushrooms for the couscous and used the tops to fill them with blue cheese and bake next to the fish! Delish!
