Buckeyes I

Way too much sugar!! I love buckeyes and had not made them in a long time and they look beautiful, but man you get a toothache from the amount of sugar! Although if you like fudge this recipe may be for you. I read another review saying the same thing but I like to follow the recipe as given the first time. If you love super sweet stuff this recipe is for you - if not at a very minimum the sugar has to be much less. I can't say for sure how much since the ratio of dry to liquid/solid would be thrown off. I found that I didn't really need to put a toothpick in each I just used a shallow bowl and used tongs to hold them while covering the bottoms of the buckeyes. Oh yeah, you actually need the heat from your hands to roll the balls or they will just fall apart - I squeezed them at least 3-5 times before starting to roll them into a ball and they rolled very smoothly after that. Also it is VERY hands on....I am not sure I will eat these made by someone else again...LOL

Cheese and Sausage Stuffed Zucchini

Very tasty, but how could you go wrong with sausage, cheese and zucchini? I think you could easily modify this recipe to fit your needs and it would still be delicious - I would say though that it needs to have sausage of some description (turkey or chicken) it helped to flavor the zucchini.

Taco Pie

This is ridiculously easy but very tasty, and the plus is you can modify this to fit your dietary needs! Less sodium=then make your own taco spice, lower fat=use low fat cheese or no sour cream, etc. Someone had commented on how much trans fat was in the recipe, but that really depends on you, the cook. There are plenty of chips out there with 0 trans fats. Simple, good and kid friendly.

Italian Beef in a Bucket

I hate to give less than great reviews when everyone is raving but...this came out good. I followed the recipe exactly except for the use of a little more broth (since I have a huge crock pot). It may be it was only ok since I had a similar problem to another reviewer that 18hrs seemed way to long. The meat was falling apart after 9hrs and was better then. After 18hrs everything else (other than the meat) in the pot was essentially mush. I would recommend that individuals do a taste test at about half the time to see if the flavor is good and the meat is falling apart. Not all crock pots are equal (especially at 18hrs) and yours may cook faster as well. Honestly, though I had hoped it would be more tasty either way.

Tangy Cucumber and Avocado Salad

I love avocado and cilantro, so I thought this would be a sure 5 star, but it was merely refreshing. It has a nice flavor but really would work much better as a topping on something (like chicken or on a wrap).

Shrimp and Feta Cheese Pasta

Don't underestimate the simplicity of this recipe, it was very good. As one other reviewer stated though, fresh herbs are the way to go (if you use them regularly). I probably used about 3tbsp of wine and just used canned diced tomatoes. I didn't need nearly the amount of feta in the recipe, but you can adjust to your taste. Will definitely make again!

Chicken Pot Pie IX

This was delicious! I stuck to the original recipe only changing the addition of water (I used chicken broth and instead of draining used that for the broth added later). I added a small amount more of cream and broth to thin to a very thick soup consistency. I wouldn't substitute for the celery or celery seed, I really think that was the spice that sent this over the top. My husband hates celery and loved it! Very simple and yet extremely tasty!

Awesome Sausage, Apple and Cranberry Stuffing

Really delicious stuffing! I changed a few things in that I did not add any liver (ewww) and I just used store bread stuffing (plain). The family loved it, I cooked in a pan until a nice crust formed over the top and it was sooooo good. I will make this again and again!

Cabbage Rolls II

I think overall this is a great recipe. I did alter things a little though, the first is I never cook the rice, before stuffing I mix it right with the meat and it is always cooked and has a nice consistency. If you get a large head of cabbage it is fairly easy to remove the leaves before steaming and once steamed trim the thick stem down. I also just cook in an oven at 350 for about 45 min, they come out delicious without too much fuss (the meat would probably be very tender but I really don't pre plan things enough to wait hours for dinner). The best part of this recipe is the sauce, it can make or break cabbage rolls, and this is one of the better sauce recipes I have found.

White Chili with Ground Turkey

I followed the recipe exactly and it was good, but not five stars good. It had a very Middle Eastern flair and was much improved the next day when combined with rice but it was lacking something. I almost wonder if reducing the amount of chilis to about half would have made this better. There were kind of competing flavors...like it couldn't decide if it was Mexican or an Indian dish, but if you are looking for a easy to make white chili this recipe was pretty good.

Russian Mushroom and Potato Soup

This recipe was delicious! I was somewhat doubtful because of the simplicity of ingredients, but it was extremely tasty. I followed the recipe exactly except for adding about 1/2 the dill. (Not a big dill fan).

Chicken In Basil Cream

Very good! I made some modifications to suit my own taste of course. I decided to forgo the breading on the chicken and to tell you the truth the sauce can stand alone without the additional labor (and fat). I just used chicken breasts halved and cooked in a pan with olive oil. I also couldn't find pimentos, so used roasted red peppers instead.

Sweet And Sour Chicken Meatballs

The recipe was pretty good. The meatballs were great! I would agree that the veggies would have been better in large chunks. For those unfamiliar with ground chicken & turkey, they tend to be very sloppy(mushy)initially but firm right up once cooked. Just make them as close as you can to a ball and drop into the sauce. A good dish to add some variety to the weekly meal. I would recommend using chunks of pineapple as well, I think that would have elevated the dish a little more. I made rice separately since we like to adjust sauce individually.

Apple Pie by Grandma Ople

This is the best apple pie I have ever had and will never use another recipe! This recipe can use virtually any apple as long as they are not overripe. We went apple picking and some got some jonathan & red delicious apples and used in this pie and I have used this recipe with grandma smiths, delicious either way! The only modification I made is instead of putting the butter mix over the top I just pour over the apples directly. It will still bubble over and come out on top of the crust but there is a much more consistent coverage in the pie.

Spanakopita (Greek Spinach Pie)

This was really good and even my kids loved it. I did change some things to fit my taste but the overall recipe is great. I used 1 1/2 bags of 9oz baby spinach (no where near 2lbs)I found that for everyone's need for more pastry this made a better balance as well as using about 2 extra sheets per layer. I only used 3 green onions, 1/4 cup parsley and realized after we ate it that it would have been perfect with more feta. Since I modified the recipe to my tastes I feel I cannot rate less than a five since we loved it, so the core recipe is a winner.

Cocktail Meatballs

Very tasty, I did change some small details. I used 1/2 real onion chopped, which cooks just fine in the oven. I was also in a time crunch and while the meatballs were cooking in the oven I cooked the sauce, but it was not breaking up well, so I got my hand mixer to make the sauce ingredients nice and smooth. (No cranberry sauce lumps)
