Jimmy's Mexican Pizza
Ok I blew it and used 7 inch tortillas so we ate with a fork. I did cook the tortillas in the oven first - 3 minutes each side and bumped the ground beef to 3/4 pounds - bumped the seasoning accordingly. Mixed 3/4 of the can of beans into the cooked ground beef to skip the first step. Just spread the warm meat mixture on the prebaked tortillas and added the toppings and baked! The seasoning is perfect (please don't use taco seasoning out of a packet!) and can't wait to make them on 10 inch tortillas so they will be thinner! Hubby loves them and they will become a regular!

Jalapeno-Garlic-Onion Cheeseburgers
I have to fess up to eating these two nights in a row. I did not have pepper jack the first night and just used cheddar and they were great! The second night I used pepper jack and wow! I added a tad of worcestershire sauce and some red hot to the meat and did as another person suggested and made thin burgers and placed cheesed on top of one and sandwiched another burger on top. I don't think I will ever make a cheeseburger (of any kind) without doing this step! They cooked perfectly though you do need to be careful flipping them! Yum!

Grilled Sea Bass
I caught a nice Striped Bass yesterday and had no idea how to cook it! I am so happy I came to my "go to" recipe place! I did triple the spices and just added them to the butter to make a paste. Brushed on the fish grilled about 7 minutes on each side on high and yum! It did fall apart just a tad. Served with a summer squash/Zucchini and diced tomato medley stir fry which was the perfect compliment! Skipped the olive oil mostly to eat a guilt free ice cream sundae!
