Mom's Best Pork Chops

Reviewed: Nov. 3, 2011
This was a very easy, very yummy recipe. I gave it 4 stars only because I adapted the recipe to add more flavor and I think the original version would be a bit bland. Like another reviewer, I threw in some garlic salt & other seasonings into some flour, did the flour step first, then the egg dip. After the egg dip, I sprinkled on some seasoning on both sides of the chop before doing the cracker dip, again to add more flavor. Finally, instead of using Saltines (some reviewers said it was too salty) I opted for Trader Joe's "social crackers" which are a basic butter cracker. The result was awesome & I will definitely be using this recipe again. They were light in texture, juicy and moist. I baked them for 20 minutes on each side & they came out perfect.

My Chili

Reviewed: Oct. 30, 2010
Good, with some changes. 3 cans of tomatoes, used 2 cups of my own homemade beans, seasoned the ground beef with Suszy Q's pepper blend, & added a couple tablespoons of brown sugar when I added the beans. I think 4 cans of tomatoes would have left it a bit runny but it turned out good otherwise. Good base recipe!

Sesame Noodles

Reviewed: Oct. 25, 2010
Yummy - my changes were adding the sesame oil near the end instead of boiling with the rest of the sauce. Also, I threw the noodles into a hot skillet & then added the sauce, letting it all cook together for a few minutes. I added marinated chicken pieces to the noodles, which was yummy as well. Next time I plan to add a veggie like broccoli or squash & maybe a cornstarch / warm water mix to the sauce, just as a thickener. The taste was more sweet than spicy & went very well with the teriyaki chicken.

Quick and Easy Pizza Crust

Reviewed: Feb. 2, 2010
I would give it 4 stars except I made some of the suggested changes. Hubbs loved it, I didn't care for the density - it was incredibly thick & heavy. But easy as all get out, fun to make your own dough, so I'll probably mess around with the recipe once or twice more before giving up altogether on it. The thinner pieces were perfect but there were a few spots that were just incredibly dense - I did prebake it for 5 minutes, probably should have punched it down & flattened it again before adding toppings?

Easy Pizza Sauce III

Reviewed: Feb. 2, 2010
If you like the taste of tomato sauce & tomato paste, then this is your "sauce" - it was a tiny bit better once it had cooked on the pizza itself, but it makes a TON & there was no desire to save any for future use. Back to the drawing board...

Savory Pork Stew

Reviewed: Dec. 9, 2009
Most of the time I can manage to eat something I've cooked if I like all the basic ingredients...this is the one exception. I honestly could not believe how this tasted! There was nothing good about it - not the presentation, not the texture & most definitely not the taste. Very disappointing considering how much it makes. I will be a little more cautious when trying a new stew.

Cinnamon-Apple Chex® Mix

Reviewed: Nov. 15, 2009
Delicious & easy!! Only reason I didn't give it 5 stars is because I used Cinammon Chex (not Wheat) & I didn't use dried apples; I used the cinammon "crisp" apple chips - wonderful! I did think the rasins were a bit out of place, as they sunk to the bottom of the mix, so you had to dig for those, but they tasted yummy. Such a great holiday snack!!

Chocolate Zucchini Bread I

Reviewed: Aug. 12, 2008
Definitely tasty, just not as moist as I was hoping from the other reviews. I did only use 1/4 cup of sour cream as that was all I had on-hand, so when I make it again, I will go for the full cup. I also included some shredded carrot, used cocoa powder & butter in place of the chocolate squares & used 1/2 whole wheat 1/2 white flour.

Healthy Oat Peaches and Cream Muffins

Reviewed: Aug. 12, 2008
After making these muffins, I've decided fresh peaches do not belong in muffins. 2 stars given for the basic recipe, which is easy to put together & without the cream cheese & peaches is a good "base" recipe to add to. But there is very little flavor in these (surprisingly) & I even added additional cinnamon & nutmeg. Not impressed.

Caramel Apple Pork Chops

Reviewed: Aug. 10, 2008
I can't believe there are so many reviews for this recipe because it is bland at best. The apples are awesome - no doubt. But the chops are terribly bland. I might attempt another go at this recipe but marinading the chops first & maybe getting a more flavorful result. 3 stars for the apples - yum!

Carrot Zucchini Saute

A very light, very easy side dish. I had to use a little more oil after adding the zucchini & I only used a pinch of seasoning. Even my 2 yr old like it! Thx for the recipe.

Grilled Garlic and Herb Shrimp

Reviewed: Jul. 15, 2008
This was very disappointing. I couldn't even taste the shrimp - it just tasted like a big bite of Italian seasoning. A waste of good shrimp. Followed directions exactly - I'll be looking elsewhere for a shrimp marinade.

Carnitas Filling

Reviewed: Jul. 13, 2008
Sorry but this was terribly disappointing. No flavor, dry, not pleasant. I've tried "doctoring" the meat to make it taste good & it just isn't worth it. Used the crock pot, as other reviewers had success with that. Maybe I used too much water? Either way, I won't be trying this again.

Cinnamon Bread Delight

Reviewed: May 20, 2008
Wow, I was surprised at the mild flavor of this bread. Moist, fluffy, looks & smells great. But even with the substitution of brown sugar, some nutmeg & additional cinammon added, it's rather...bland. Good, no doubt. Just not the WOW factor I was hoping for. I'll definitely make it again, maybe with chocolate pudding instead. Per recommendations, I used 1 cup buttermilk & 1/2 a cup whole milk; 1/4 oil, 3/4 c cinammon applesauce; 1/2 c white, 1/2 c brown sugar. Added 1/2 tsp nutmeg, an additional tsp of cinammon. Baked for 50 minutes, came out lovely! Added the cinammon/sugar mixture on the top 10 min. before done.

White Chocolate, Chocolate Cookies

Reviewed: Mar. 13, 2008
Very good, but I accidentally put in 2 BAGS of white chips instead of 2 CUPS - so, they are much too sweet now. But I like the texture, I like them flat rather than super puffy. Added salt & vanilla, stuck with the baking soda & let them cool on the cookie sheet. Dough is definitely NOT easy to work with, but the results are a delicious cookie - even with too many chips. ETA: these are so delicious after they have completely cooled - don't judge the flavor or texture if you're tasting it right out of the oven - they are moist, with just the right amount of chocolate - delicious!!

Shrimp Tacos

Reviewed: Feb. 26, 2008
The salsa was good in my opinion - hubbs didn't care for it. The shrimp were NOT good in my opinion - hubbs liked them. The honey butter made them smell & taste like old seafood - NOT GOOD. I wouldn't recommend these unless you seasoned the shrimp while cooking, maybe adding lime juice & salt with the seasonings. The idea is simple & I think the salsa was good enough for 3 stars, but no way is the shrimp good as-is. Not making this one again.
