Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: May 3, 2009
OH MY!! A sweet little treasure inside these cupcakes makes me smile! I love cookies. I mean really, they're possibly the best thing ever..and to combine them w/ a cupcake. True genius! Way to go LTH! I got 25 cookie dough balls and only made 23 cuppies. I was a bit more generous w/ my batter. ;) A keeper for sure. Want to impress the school kids or your family? These are the ones!

Melt-In-Your-Mouth Meat Loaf

Reviewed: Apr. 22, 2009
I wasn't sure how good this would be since it seemed very moist when I put it in the crock. But, it was very good! I could have used a leaner ground beef, but all I had was 80% (which is what I normally use for hamburgers). That being said, it was still really good. Next time I make it I'll use a lean ground beef to cut down on the fat. ;)

Ninety Minute Cinnamon Rolls

Reviewed: Apr. 15, 2009
SOOO good! I wish I could say mine came out as pretty as the picture, but I didn't take them out when I should have (busy w/ the kids) and they were a bit dark. But still, amazing! I frosted them w/ cream cheese frosting. Mine took longer to rise (about 50 min) but that's ok. Will be making these again for sure!

Butternut Squash Bisque

Reviewed: Apr. 15, 2009
Fantastic! I roasted my squash and added it to the soup when the carrots were just about tender. Left out the cream and also sauted the onion w/ cooking spray to save on fat & calories. So good..a nice delicate flavor. Not too strong which was a true joy after a few nights of spicy mexican food. :) My children enjoyed it as well (surprisingly) and my 18 month old devoured 2 bowls!

Chicken Spaghetti II

Reviewed: Apr. 14, 2009
I personally would give this 5 stars. My children gave it an average of 4 though. It's got a little heat to it. I love that...my children don't. That being said, I made it as written w/ the exception of using elbow macaroni instead of spaghetti because it's all I had. I used 16 oz of macaroni as well. It's the perfect combo...and I topped w/ crushed buttery garlic club crackers (mixed w/ about 3 Tbsp melted butter) and popped it in the oven at 350 for 15 min. YUMMM!

Jenny's Grilled Chicken Breasts

Reviewed: Apr. 8, 2009
I think this was pretty good. I loved that it actually had flavor. I like my chicken on the salty side, so I added a bit more seasoned salt. I also grilled this on my george foreman grill...came out great! Topped it w/ mushrooms & onions. :)

Turkey Bean Soup

Reviewed: Mar. 25, 2009
First of all, when my most picky child says I need to make this more often, It's an automatic 5 star! I had to make some substitutions thought because I realized I didn't have everything I needed. So, I used 1 can of creamed corn instead of frozen, and I used chicken stock instead of broth. All I had was light red kidney beans, so I used one can of those and about 1 1/4 cups lentils. I also added a good handful of frozen peas. After reading the reviews, I thought I would start w/ only 1/2 of the recommended measured spices thinking it would be too spicy for my children. After tasting it though, I added the rest of the spices..I think I could even stand more next time. It was mild..really nice. I sprinkled w/ cheddar cheese and served w/ easy speedy corn muffins from this site. What a hit! ( I forgot, I left out the green chilis since I didn't have any, which is probably why it wsn't hot or too spicy. I'll try it next time w/ them though!)

Cream Cheese Frosting II

Reviewed: Feb. 13, 2009
Perfect classic cream cheese frosting. It's very spreadable..so not of decorating consistancy...maybe good for some piping work. I did manage to get a shell w/ it after chilling it a bit. Great flavor and not too sweet. I cut the recipe in half. :)

Nuggets with Dill Sauce

Reviewed: Feb. 6, 2009
I think this recipe has some potential. I tired it as is w/ the first batch of nuggets and the batter was bland and didn't coat well. So, w/ the rest of the chicken, I used dipped the chicken in the batter then in bread bread crumbs flavored w/ herbs and it was much better. I deep fried them in the temp oil recommended. The dill sauce was lacking something. Maybe pepper or a little mayo? I also think a little less relish would do. the dill, however, was perfect (I love dill!) :) Will certainly make again and comtinue to play around w/ it to achieve our liking. Thanks!

Best Brownies

LOVED these brownies! They were fudgy, and so easy! I didn't use the frosting since I like my brownies "naked". Took them to the superbowl party and they went fast. :)

Best Ever Muffins

Reviewed: Jan. 31, 2009
These were very good.:) I would have liked them a tad sweeter, but otherwise, a great basic recipe. From one batch, I made blueberry, chocolate chip, and butterscotch muffins. They all went quickly! :) Will surely make again. Thank you!

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: Jan. 27, 2009
This was really very good. I wasn't sure at first. I made a double batch since we have a very large family. I needed to cook it in batches though because otherwise it stayed to moist. You really need to let this cook until most of the jusices dry out and you get those crispy parts. I used frsh pepper and onions and also steamfresh corn. Left out the red pepper flakes due to sensitive taste buds and used paprika and a little chili powder in place. Like I said, I wasn't too sure about it, but it grew on me and I found myself going back and picking at it! That's a 5 star in my book. All of my children loved it and so did hubby. He said he could have easily eaten the rest. ;)

BBQ Pork for Sandwiches

Reviewed: Jan. 19, 2009
Oh baby this is good! I didn't have any beef broth, so I used chicken stock w/ one beef boullion cbe disolved in it. I used Sweet Baby Rays BBQ sauce. I didn't have quite enough, so I made some homemade to mix w/ it ( Delicious bbq sauce from this site). It was wonderful! I also didn't have pork ribs, so I used a pork roast that I had. Cooked it from frozen in my crock pot all day on low. Came out perfect! Will be making this again for sure. :)

Scalloped Potatoes and Onions

Reviewed: Jan. 16, 2009
I"m giving this 5 stars because my son went back for 3rds...and my hubby continuously said it was good. I liked it as well, I just wish it looked better on the plate. Totally tastes better than it looks. So don't be scared when you take it out of the oven and think to yourself "Oh boy...do I want to try it?" ;) Try it, you'll be happy you did.

Claudia's Yummy Frosting for Cakes and Cupcakes

Reviewed: Jan. 16, 2009
This frosting was VERY good! Less sweet than most frostings and light. To fix the problem of the frosting being too runny, like other reviewers mentioned, I just left out the milk. There really is no need for it. Perfect spreading consistancy and I was also able to decorate w/ it for borders and piping scroll work. This is a lightly crusting recipe also. Be sure to refrigerate your cake with this as it has raw egg whites in it. Highly recommended. :)

Russian Mushroom and Potato Soup

Reviewed: Jan. 14, 2009
OH this is good! I took the advice of Gitano and used fat free sour cream in place of the half & half. I have to admit..I was worried about doing this since I don't like the taste and texture of fat free sour cream. But, I did it anyway and I'm glad I did! Saved a TON of calories and fat! this way: 148.1 Calories, Fat: 1.9 g, Cholesterol: 3.2 mg, Sodium 1,261.4 mg, Total Carbs: 23.9, Fiber: 2.8g Protein: 9.6g. I also used cooking spray to sautee the veggies & mushrooms. Soo good! Only made 1/2 the recipe since the kids don't like mushrooms...but I love them! Will certainly be making many times over!

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 8, 2009
This soup was wonderful! My hubby actually said "this is from scratch?!" My children LOVED it...except Jack (he doesn't eat anything I make). I didn't have veggie broth, so I used 4 cans of chix 1 can of cream of celery at the end. I added a handful of peas as well. Made this for my hubby since he has a terrible cold. Followed another reviewers suggested and sauteed the veggies and added 2 cloves minced garlic to those. Very, very good! Will be making again and again! :)

Authentic Chinese Egg Rolls (from a Chinese person)

Reviewed: Jan. 4, 2009
These were really good. I found the egg roll wrappers in the produce section. The flavor grew on me after a while. I upped the soy sauce a bit and used chopped shrimp in place of the pork. Served w/ duck sauce. :)
