Mexican Rice II

This is a pretty traditional Mexican rice recipe, except for the cumin, having grown up in Mexico, I never knew anyone or any place that would add cumin to rice or nearly to any real Mexican dish, this is a Tex-Mex flavor. Real garlic is also used instead of the garlic salt or powdered one.

Salsa De Tomatillo

This is actually, the exact same way my mom makes salsa de tomatillo, it is fabulous indeed, although no matter what, mine is never as good as hers. :D besides the cilantro you can add chopped scallions. depending on what you are going to do with it you can increase the amount of jalapeños to make it hotter, for example two jalapeños are fine when you are going to make enchiladas or chilaquiles, but if you are going to serve this with tacos or chips you may want to add a couple more jalapeños. you can also add a can of tomato puree.

The Best Lemon Bars

I just made these, and they truly are the best. I used 2 medium lemons and about 4 limes to make it up to 1/2 cup of juice, I also reduced the sugar to 1 1/4 cup. Delicious!!!

Whole Wheat Beer Bread

This was very good, I used Indio a Mexican beer that is a little strong, and it came out great, you could taste the flavor of the beer, but it wasn't overwhelming. I think that if I had used a lighter beer, the flavor would have been too mild, but that's just me, I like beer . I used to make cheese and spinach sandwiches, and I used the leftovers the second day to make tomato bruschettas, delish!

Old Fashioned Onion Rings

wonderful!, and not THAT messy as I thought it would be, I was lazy and skipped the draining part, I just remove excess batter by shaking each one a little before putting in the breadcrumbs :D

4H Banana Bread

yum, this is so good. first time I added a tsp of vanilla and chocolate chips, next time I'll add cinnamon and pecans (I like them better than walnuts), and probably I will use a little less sugar, but this is definitely a keeper. thank you :D

Chocolate Oil Cake

Taste was good, but not to die for, still not chocolate-y enough for my taste, and I added extra 2 tbsp of cocoa powder. Consistency was a little gooey and it took way much longer to bake, but this is probably because i made some changes. I will probably try this again, adding more chocolate of course. Thank you :)
