Awesome Blueberry Muffins

A bit grainy due to the whole wheat flour. I didn't see the cook's note about substituting butter for the oil, until it was too late - I wish I had used butter. I filled the cups almost to the top and got 18 muffins.

Apple Pie Muffins

Used 3/4 cup plain yogurt + 1/4 milk as substitute for buttermilk. Make sure to melt butter as directed - it makes a difference. I always add chopped walnuts (2/3 cup). Made 24 standard size muffins, but I only fill about 2/3 full. Any fuller and the streusel topping spills over and cooks onto the pan edges making removal from the pan difficult. It is good to use foil liners on this one(usually i go without any liners)to make handling and removal easier.

Chocolate Chip Banana Muffins

I had one banana so I scaled to 12 servings. It filled 3 pans of mini muffins (9 muffins each). ** second time: as directed except used 1 cup dark chocolate chips in place of 3/4 cup semi-sweet. Made 19 muffins.

Hearty Split Pea Soup

Fabulous. Used leftover ham I had in the freezer. Added a little celery because i could, and went with 4 teaspoons chick bullion along with the 5 cups boiling water. Didn't need milk until i reheated the next day. Might have to make this again this week. 4 hours in the slow cooker was perfect. Yum. *I used don't-need-to-soak peas.* I think others that had undercooked peas may have had a different variety that needed soaking.

Absolute Best Potato Casserole

Very Good! Used a cup of cubed spiral ham out of the freezer (thawed). Also, used mixed cheese: half swiss, half cheddar. Microwaved sliced potatoes with just a splash of water to get them started - then added other ingredients and baked as directed. Didn't even notice the cauliflower. After dinner a guest asked for the recipe, and it wasn't until then that I remembered the cauliflower was even in there!

Cornish Game Hens with Rice Stuffing

Delicious. I was a little nervous two of these little hens would feed 4, but it worked out great. I was also concerned about using only 1/3 cup rice (I used long grain white), but that was plenty too. I had more than enough to stuff the birds and put the rest on the bottom of the pan. I added chopped celery and carrots to my stuffing at the same time as onion, because it's just not stuffing without. I used a thermometer to monitor the hens after an hour in the oven. I didn't quite need the whole cooking time for the hens. I did think the rice was a little too flavored and would go 1/2 on the bullion (if any) next time. Served asparagus with cream sauce as a side. Perfect spring dinner. May have to make again for Resurrection Sunday.

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

This turned out great but I had to cook it over 60 minutes. I used vanilla yogurt because that's what I had. I would have added vanilla to the cake batter if I had used plain yogurt. Also, rather than jam, I used frozen raspberries and mashed them a bit (less sugar that way and saves my precious homemade jam for a more worthy use). Oh, and I skipped all the extra work with the foil and served it straight out of the 9x9 pan.

Curried Squash Soup

Delicious. I was going to skip the cream sauce, but so glad I didn't. The soup has a good amount of kick. I was surprised my 4 year old and 2 year old didn't complain about the spiciness.

Halibut with Cream Sauce

Forgot the butter but didn't miss it. Added fresh chives because I had it. Baked 400 degrees for about 25 minutes including briefly under the broiler to crisp bread crumbs. Keep thinking about what other recipes could be enhanced with this cream sauce. 4 year old and 2 year old enjoyed it too!
