Poached Eggs Caprese

Who would have thought eggs and pesto?!? This was great! Husband isn't a fan of poached eggs or tomatoes, so I adjusted for his tastes, but I made it exactly as written for me. Delicious!

Vinegar and Egg Crust

Delicious and flaky! It was my first pie crust from scratch! I had problems with rolling it out and transferring it - it's so tender it tears easily - but once I finally got it in the pie plate, it was fine. Next time I make it, I am going to add a little sugar to the dough but otherwise was great.

Chocolate Chip Banana Bread II

Super moist banana bread! I have made it twice now and both times it came out utterly delicious. Don't omit the mayo, it makes it so moist and you can't even tell it's there. The only change I made was to sub half the shortening for butter, and add a tsp of vanilla extract. It's now my go-to banana bread recipe!

Scotch Eggs

Very easy and quite delicious. I served them with gherkins and some spicy mustard with a salad and rolls, and my husband said they were better than the scotch eggs we'd had in England.

Italian Sausage, Peppers, and Onions

This was quick, easy, and delicious! Made it according to directions and wouldn't change a thing. This recipe is going into my "make regularly" recipes folder because my husband thought it was amazing. Leftovers were served on a roll with melted cheese as sausage parmesan.

Balsamic Roasted Pork Loin

Made this for a dinner party and got rave reviews! I made it as instructed and poured some of the pan juices over the pork for extra moisture. Excellent recipe!

Penne and Vodka Sauce

What a phenomenal sauce! I took the suggestions from other reviewers and added two cloves of minced garlic, finely chopped onion, and red pepper flakes for some heat. I also used half and half to save a few calories. My husband thought that I'd gone out and picked up dinner from one of the local Italian eateries until I disabused him of that notion. Served with garlic bread and salad to complete the meal. Excellent!

Cherry Pie IV

Beef and Barley Soup III

So delicious! The only change I made was by using lentils instead as I was out of barley. My hubby loved it! Next time I'll be sure to have the barley on hand.

Chicken Stir-Fry

Good recipe. I used a bag of frozen stir-fry veggie mix and was disappointed in my choice. Next time I will use fresh. The chicken was easy and very delicious.

Chinese Pork Ribs

Excellent recipe! My husband told me to keep this recipe because it was amazing. Notes: We like garlic, so I added an extra clove. To add a bit more complexity of flavor, I added a splash of rice wine vinegar, a splash of sesame oil, and a Tbs of Chinese five spice powder. Cooked it three hours in the Crockpot on high. Delicious!
