Pumpkin Cookies I

A hit in our house. I did need to bake them longer but they were quite soft and melt in your mouth treats! I added white chocolate chips, kids loved them!

Portuguese Sweet Bread I

Oatmeal Waffles

such a great recipe. I soak the oats a little before hand, I find it just helps everything blend a little better. Other than that I follow the recipe to a T, which is extremely rare for me!!

I kind of hacked this recipe, and it was still delish! I can't wait to try to make it again with some forethought. For anyone else making it on the fly, instead of marinading the salmon in OJ for 8 hours, I marinaded about 2 and then poured the oj into the dish to bake with them. (Of course this meant the entire fish didn't have the coconut coating, but I toasted coconut to serve with it to compensate) I also didn't have orange marmalade.. so I used apple and added a ton of orange zest. It did lack something, (which was probably due to not really following directions) but it was still really good. I might try to add ginger to the sauce, I think it might round the flavor out nicely.

Sweet 'n' Hot Glazed Salmon

WOW, this is the best salmon recipe I have ever tried! I didn't have apricot nectar or dried apricots, so I pured a can I had on hand. I over did the cin, but it still turned out fantastic, will make again and again!!!

Coconut Sweet Potato Casserole

I think I will cut the syrup in 1/2 next time, it was way to sweet for me. I also added a little nutmeg for some depth (pecans would have been good too) Really good recipe though, will make again!

Macadamia Nut Crusted Tilapia

Very good! Though I added some water to the topping, it was almost too thick to spread. I think next time I may use only 6 oz of nuts, there was a little too much topping compared to fish.

Strawberry and Feta Salad

This went over so well. My father in law, who isn't usually a huge salad fan, had multiple helpings! I could not find rasberry vin, so I used rasberry balsamic and added a container of crushed rasberries to the dressing.

Peach Muffins

This was a GREAT recipe. I did do 1/2 white sugar and 1/2 brown sugar, and I think next time I make it I may try substituting 1/2 the flour for whole wheat flour.

Sauerbraten Stew

was very good.. but I felt like some flavors were missing (I used to have a German roomie, who made a killer sauerbraten). I messed up cooking it too, I let the water boil too long, so the meat cooked too quickly, getting tough. If I make it again, I may try adding some cloves and ginger.

after playing with this recipe, I tailored it to a good brunch drink. I did equal parts orange juice, champagne, and peach schnapps. The original is also very good, but way to strong to serve for brunch (which was my intention)

Crisp Oatmeal Cookies

my first batch I botched by using butter that was too soft. It was still amazing, but it was basically a really big flat cookie crisp thing! The second batch I used cold butter in, this recipe is GREAT!!
