Chicken Breasts with Balsamic Vinegar and Garlic

we are NOT mushroom people, but have a really nice bottle of balsamic that i wanted to find new uses for. i went ahead with a mix of "gourmet" (that's what the pkg said) mushrooms and we loved it! hubby even said he'd eat it again. super easy to make and very flavorful. i also skipped the flower dredging and just browned the first side in EVOO.

Eclair Cake with Chocolate Ganache

UPDATE: the second time around I beat the dough a lot more, until it was more creamy, and it spread easily in the pan. It poofed up like the recipe said and wasn't as eggy tasting. It was perfect! This is so delicious! My crust didn't poof up like the recipe said so I was a little worried, but it came out just fine. It was a bit eggy; I might try it with 3 eggs instead of 4 next time. Make sure you use heavy whipping cream (if your grocery store doesn't carry "heavy cream"), especially for the ganache, and it to a boil before adding it to the chocolate. It also must sit for 1-2 minutes before whisking it together. Otherwise it may not harden.

Eclair Cake with Chocolate Ganache

This is so delicious! My crust didn't poof up like the recipe said so I was a little worried, but it came out just fine. It was a bit eggy; I might try it with 3 eggs instead of 4 next time. Baked Chicken Reuben

i LOVE reubens....but, i thought this was just okay. it wasn't disgusting but the leftovers are being passed up....don't think i'll make it again. next time i'd rather just make reubens, even if it's with chicken instead of corned beef.

Pumpkin Pastina

this is super easy, a good fall/winter dish, and a nice way to use turkey leftovers. i made it with orzo pasta and 1 c of pumpkin puree instead of squash. the best bites are the ones with turkey--next time i'll double the turkey. it didn't blow my socks off but it was comforting and i would make it again. you could probably substitute any spices other than thyme if you prefer--garlic, basil, italian spices, etc.

Maple-Drizzled Apple Muffins

delicious and moist. the drizzle makes them very candy-like (my husband's words). I used half wheat flour and went light on the sugar. highly recommended--i used real maple syrup too--the fake stuff probably makes them too sweet.

Mini Corncakes with Basil, Avocado Spread and Smoked Salmon

5 stars because my husband LOVED this. I didn't have smoked salmon, but just pan fried some salmon with lemon juice and pepper (i'd bet it's even better with smoked salmon). the corn cakes are super easy and fun to make--like little pancakes--and the avocado spread is simple, with room to personalize.

Mocha Chocolate Chip Banana Muffins

i didn't have instant coffee, so tried using really strong espresso shots. I used 2 shots and could barely taste the coffee flavor. they were still delicious, but i bet the coffee taste is more prominent with the instant coffee.

Iced Pumpkin Cookies

NOTE: i recommend spraying your cookie sheet. i also used half butter flavored shortening and they were still great. I make these exactly according to recipe, only adding cinnamon to the glaze, which makes it much prettier. they are my husband's favorite and one of my favorite parts of fall! everyone i give these to LOVES them!

this is REALLY good. i used half low-fat miracle whip/half real mayo. i cut the oil in half (it is a bit soupy) and would recommend less sugar, if you want to go healthier. i also replaced the poppy seeds with celery seeds, b/c that's what i had.

T's Sweet Potato Fries

great flavor. you don't need to pre-cook if you just cut them thin enough. i put foil on the cookie sheet, spray in and turn once during baking. i bake at 425 for 20-25 minutes. they get nice and crispy this way :)

delicious and soft. i followed the recipe exactly. mine didn't stick and i was even able to roll them in the sugar/cinnamon completely. i did flatten them slightly before baking. they won't brown on the top, so don't wait for that--check the bottom. that might be why some people are ending up with burning problems.

Pesto Turkey Burgers

my husband and i thought this burger was delicious. make sure you cut the seasonings down if you only use 1 lb of turkey--this may be why some people thought it was too salty (the recipe calls for over a lb). i broiled each side 6-7 min and topped it with onion and spinach and rubbed a bit extra pesto on the bun with some mayo. i didn't add the seasoned salt at the end, but instead a light sprinkle of crushed red pepper.
