Goat Cheese and Tomato Pizza

Yellow tomatoes from my Dad's garden made this an amazing pizza! I pre-cooked a commercial crust, let it cool, added garlic infused olive oil, a little red sauce, the yellow tomato slices then sauteed sweet onion, mushrooms, red peppers and then the goat cheese (maybe 6 ounces, rather than just 4). Since the crust was already baked and the veggies sauteed, it was just 8 minutes at 450 degrees. Half-way through cooking I added baby spinach leaves and drizzled a little more of the olive oil so the leaves wouldn't dry out too much. Such a treat!

Garlic Butter Sauce I

This was great! Like others suggested, I made this into a garlic cream sauce. I added a Tablespoon of flour when the garlic was done cooking, and stirred in 1 1/2 cups heavy cream. After the sauce was thick, I removed from heat and added 1/2 a pound lump crab left over from making cold Crab Cocktail Dip (recipe found on Allrecipes). The crab got hot without overcooking. Delicious!

Sausage Pasta

Awesome! Reduced the fat by cooking the sausage until 5 minutes from done, drained it, then added the oil and cooked the onion and garlic with the meat. As another reviewer suggested, I used fresh spinach and just stirred the leaves into the sauce for a couple minutes until wilted and bright green. Whole family loved it - no complaints!

Marinated Grilled Shrimp

This marinade is awesome! The first time I made it just like written and used grilling shrimp - split and deveined with the shell on - then cooked in a grilling basket instead of skewered. That makes it almost too easy! Planning to make them again tonight with the shrimp peeled and deveined and definitely in the grilling basket again. Will use a little less oil this time and a little more cayenne pepper. Thanks for a great recipe!

Bowtie Pasta

My husband and I loved this! I substituted chicken broth for the white wine since he doesn't usually like wine based sauces and I also used capicolla ham instead of prosciutto. Added a little minced garlic and sprinkled parmesan cheese on top. The broth and kick of the capicolla made the taste perfect. Served with garlic bread. Quick and easy, this recipe is a keeper!

Sugar Cookies with Buttercream Frosting

These made the perfect sugar cookies for our Christmas baking tradition. I found the dough the perfect consistency to roll and was much easier to work with than other recipes I have tried. My 10 and 7 year old boys loved decorating them.

Southwest Chicken

I was skeptical about the looks of this, but my husband and boys loved it served over rice. I followed the idea of sprinkling taco seasoning on the chicken breasts before browning. When there were leftovers, I shredded the chicken and mixed the leftover rice and vegetables with it. It was even better the next day!

Chicken Stir-Fry

Family loved this! I used a frozen vegetable mix that included broccoli, sugar snap peas, baby corn, water chestnuts and carrots. Microwaved them on the shorter side of recommended time and they turned out perfect! Thank you for a delicious easy meal!

London Broil II

We had a warm spell, so I grilled this last night. My entire family loved it and there were no leftovers, although it would be spectacular on top of salad. I added a little bit of lemon juice and allspice as others have recommended. Thank you for the great and economical recipe!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

I loved this! I did it a little differently since the night I made it I was also grilling steaks. I grilled the zucchini with a little oil and cayenne pepper then finished it in a pan with the lemon zest, a little more oil, cayenne and light cream cheese. Will definitely make again and again!
