Brandied Shrimp with Pasta

This was pretty good, but left me wondering: was the flambé really necessary? There was one shrimp that was slightly more brown when the fire died down, but otherwise I didn't notice a difference. That said, it was pretty tasty and maybe a little bland. Not sure if I'd make it again without some modifications, but I'm pretty proud of myself for flambéing for the first time without burning the house down.

Christmas Breakfast Sausage Casserole

I did actually make this for Christmas brunch and it was so easy and really delicious! Company loved it! I served other dishes with it that needed attention, so this was the perfect. I used an apple chicken sausage and fresh Italian bread. My husband doesn't really like cheese so I cut it down by half, and trust me, that was plenty. It doesn't seem like there are enough eggs for a breakfast casserole, but the bread makes it really light and fluffy. I highly recommend it!

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

I found this recipe after Christmas when I had some left over phyllo dough. It was great, except that the sauce was *extremely* lemony. I threw out the first batch of sauce and remade it with only 1 tbsp of lemon juice and it was lovely. I may not buy and entire package of phyllo especially for this, but my husband and I really enjoyed it.

Miracle Soup

I didn't follow this recipe exactly, but because what I made came out FANTASTIC I thought I would share :) I made half a batch and cut the cornstarch down by half (again), which I thought give it a great texture. The market didn't have a can of bamboo shoots, so I used a can of chop suey vegetables (which contains bamboo as well as sprouts and some other things) - I highly recommend that. There are several frozen stir-fry veggie mixes available, but I chose the Bird's Eye snap pea mix and it gave the soup a tiny bit of sweetness. Instead of fructose, I used two packets of Truvia. It doesn't sound like it would make a difference, but it was exactly right (I taste-tested before adding, after adding 1 packet, and after adding the second). I also followed some other reviewers' advice and left out the spinach - I didn't think it was missing anything. I used tofu instead of shrimp just because I was hoping to have leftovers around for the week; i used half of the package, and probably should have used less, but it went well. Finally, I forgot to halve the crushed red pepper so it was quite zingy. But I loved this soup the way I made it. I shouldn't have cut it in half though - my husband loved it too and it's all gone now!

Spanish Flan

This is a hit every time!! The caramel spreads in the baking dish better if I put the dish in the oven while it preheats. I've made it a few times with 3 eggs, but I like it a little better with 4. So many people have asked me for this recipe - it's a really good one!

Almond Orange Crusted Chicken with Fennel Arugula Salad

I would have given this recipe three stars, but my husband really liked it so I've given it four. The orange zest gave the chicken a slightly bitter taste and the salad dressing was a little too lemony for my taste. Maybe with a few modifications it would be better...I feel like the chicken needed a little bit of glaze or something. This recipe is worth a try but not one of my favorites.

This cake was a little extra work, but really fabulous and everyone loved it. I didn't frost mine, and I feel like it would have been too sweet if I had. I dusted the towel with confectioner's sugar (very generously) before turning the cake onto it AND dusted the cake before rolling. It kind of looked like a birch log when I finished, so I cut a piece of copy paper into narrow triangular strips, laid them across the cake and gave it an extra dusting of confectioner's sugar. I also added some extra striations with a vegetable peeler. I've uploaded the picture to share. This one might become a yearly tradition!

Golden Rum Cake

This cake is so wonderful that my grandmother asked for the recipe! I've made it a few times and have found that spiced rum really creates a nice toasty flavor. It's a total diet killer, but I reined it in by only using half of the glaze, maybe a little less, and I really don't think the flavor suffered for it. Make sure when you buy your ingredients that you get the large package of pudding mix. I grabbed a small one, and then one more to have on hand, and found out when I got home I needed both (oops). Great recipe - it got rave reviews from everyone. Also comes out nice with chocolate cake and pudding mix.

Zucchini Risotto

This was really delicious. I made it for dinner party I threw for my dad's birthday. I served it as a side for 10 people and there was plenty for the next day. Do NOT skip the sun dried tomatoes, even if it means going to the store in the rain. It gives this dish color and fabulous flavor. I did follow the recipe exactly and the one thing I wish I had done differently was my choice of stock. I used veg instead of chicken and the dish definitely came out a dark tan color. It might have looked a little creamier and more appetizing with chicken stock instead. Still tasted fantastic though!

Fresh Rhubarb Pie

I made this for my father-in-law as a thank you for helping us out with the tons of yardwork he did for us this summer. Rhubarb pie is his favorite and I had never made one before. He called the next day to say it was one of the best he's ever had ("And I've had a lot!") and that it tasted like a pie from a professional bakery. Wow! I have yet to try it myself, but if he's happy I'm happy.

Sicilian Spaghetti

My husband surprised with this after a long day. He said that it was fairly easy to make and it had a nice taste. We probably won't make it again the same way because it was very dry. I know it's supposed to be dry, but it was dry enough to detract from the nice fresh flavors. I'd probably cut the bread crumbs down by half next time.
