Mom's Zucchini Bread

Wow, wow, wow. I used 3 cups of un-drained shredded zucchini and replaced nuts with 1/2 cup chocolate chips. Everything else, I followed exactly. My eight-year-old son couldn't believe there were vegetables in it. Thank you!

Overnight French Toast II

This is absolutely delicious--I've made it at least 5 times so far. I actually use Texas Toast and layer the ingredients in my 9 x 13 glass Pyrex. 1/2 sugar mixture goes on the bottom, then a layer of bread, then 1/2 egg mixture. I put most of the remaining sugar mixture on top of that, and repeat with the bread and remaining egg mixture. I end up with a dollop of the sugar mixture on each piece of egg-soaked bread and refrigerate. I've never had a problem with hardening sugar on the bottom of the pan this way. (Next time, I may try adding some cinnamon!)

Chocolate Pixies

DELICIOUS! My mother made these every Christmas when I was growing up, so my son and I made these together. I was out of baking squares, so I used 3 tbsp. baking cocoa powder and 1 tbsp. butter for each square needed (12 tbsp. powder and 4 tbsp. extra butter). It worked just fine! We also had some extra Brach's chocolate stars, so we put them on top of some of the cookies, but they really are perfect just the way they are!

Candied Chicken Breasts

We couldn't believe how great this tasted! I put the full amount of sauce (pineapple juice instead of water) over 6 chicken breasts and baked it for about 40 minutes. I did not bread or even sear the chicken breasts--just put them straight from the flour/salt/pepper/oregano mixture to the baking dish (lined with parchment). Pineapple bits went on the last 15 mins. of baking. I served it with brown rice. Yummy! My husband asked me to make it again tomorrow. :)

Tilapia with Creamy Sauce

This wasn't one of my favorites. I changed quite a bit, initially. 1. I halved all of the spices, and it was still too much. I can't believe all of the dill! Way too overpowering. 2. I used 5 tablespoons of milk INSTEAD OF lemon juice in the cream sauce, and I added 1/4 tsp. of salt. That was OK. I'll be sticking with garlic/butter versions of tilapia from now on.
