Asparagus Bruschetta

I was hesitant about the lime but it worked great. Didn't have green onions on hand, but chives and red onion worked well to substitute.

Hot Spinach and Artichoke Dip

I've never felt the need to add the mayo to this recipe, and it's been my go to spinach artichoke dip for years. So easy and tasty. I have a lot of vegetarian friends, so I tend to leave out the bacon.

Marshmallow Fondant

I am not a baker, but wanted to make a "steak cake" for my bf's 30th surprise party. This recipe was easy to follow and not too intimidating! I just used half the recipe, a hand mixer (with bread dough attachments) and tons of crisco on my hands, the bowl, the counter; basically everything the marshmallow was going to touch. I put it in the fridge overnight and had no trouble rolling it out the next evening. I was just using it as an offwhite, so the slight beige resulting from the vanilla was perfect.

Garlic Parmesan Orzo

Absolutely delicious! I halved the recipe and it made a perfect side for three people. Also, to reduce pots, after draining the orzo, I used that pot to cook the garlic and butter. I added a little bit more milk as the orzo absorbed it almost immediately.

Fruited Curry Chicken Salad

I used dried cranberries instead of the raisins, and took another reviewers advice and just used the food processor. Easy and delicious for summer. Great with mini pitas.

Eggplant Antipasto

Fantastic. I don't bother peeling the eggplant, and I personally don't like mushrooms or olives. I substitute zucchini for the mushrooms, and 1-2 tbl of capers for the olives. Instead of the vinegar sugar combo I followed others suggestion and just use balsamic vinegar to taste-1/4 cup probably. If possible I add fresh herbs instead of dried, and cook it longer than 30 minutes, 45 more likely. Great with fresh soft/crusty bread or over pasta.

Slow Cooker London Broil

Super easy! I had a smaller cut of meat (just two of us) so there is lots of leftover gravy to use in another meal. We are not mushroom lovers so I substituted with cream of celery and it was still good. Added some red wine, Worcestershire, onion and parsnips to the crock pot and cooked it all together on low for about 9 hours.

Green Bell Peppers stuffed with Tomato Lentil Couscous

So delicious. I made one change: I used 1.5 lbs of spicy Italian sausage instead of the ground beef. I also waited until the pepper tenderness was to my liking before adding the cheese in the oven.

Louisiana Crab Dip

I halved the recipe but kept the amount of crabmeat the same. Also added Old Bay seasoning to taste (more than a tsp, less than a tbl) and a few more dashes of tabasco. It was a big hit!

Blueberry Cream Muffins

I cut the recipe in half but kept the same amount of berries, using a mix of blueberries and raspberries. Also followed another's suggestion of using half brown sugar with the white (so 1/2 cup each in the halved recipe) 12 muffins were moist and bursting with berry-deliciousness.

Slow Cooker Creole Black Beans and Sausage

I have been making this for years, it's great over some white rice. I tend to only use 1 lb of sausage, and buy the smoked ready-to-use and skip the whole browning step. Assemble the night before, pop the cooker on in the morning and come home to a yummy dinner smelling up the place.

Easy Roasted Red Pepper Hummus

If I am roasting the peppers in the oven(as opposed to store bought), I add the garlic as well so it gets a sweeter flavor. Also, I use fresh parsley in place of the basil. I add the tahini slowly and taste at intervals as sometimes I feel it overpowers the dip.

Sausage Jalapeno Poppers

I use 1lb turkey sausage, 16 oz chive cream cheese, and about 15-20 jalapeños. Definitely cut the bacon in half and precook for 1-2 minutes in the microwave. Just laying the slice on top works best for me as it saves the hassle of securing with a toothpick. I do wear gloves when cleaning the jalapeños, and stand back from the disposal after tossing all those seeds down it before turning it on too; but I am sensitive to it.

Make Ahead Lunch Wraps

I usually reduce the recipe as I make them for one and don't want them to sit for too long in the freezer. I only use the one can of black beans, and instead of the can of tomatoes just slowly add salsa until it seems the right consistency.
