Green Bell Peppers stuffed with Tomato Lentil Couscous

So delicious. I made one change: I used 1.5 lbs of spicy Italian sausage instead of the ground beef. I also waited until the pepper tenderness was to my liking before adding the cheese in the oven.

Chickpea Salad II

I didn't follow it exactly so only 3 stars. Added a cup (dry) of whole wheat couscous and left out the Parmesan to make it vegan (I add Feta at the end for those who aren't) I also add in any veggies that I get that week at the farmer's market-the latest was asparagus! I also nix the dried herbs and opt with fresh dill instead. But use sparingly as a little goes a long way. It usually doesn't need that much Balsamic.

Asparagus Bruschetta

Sausage Jalapeno Poppers

I use 1lb turkey sausage, 16 oz chive cream cheese, and about 15-20 jalapeños. Definitely cut the bacon in half and precook for 1-2 minutes in the microwave. Just laying the slice on top works best for me as it saves the hassle of securing with a toothpick. I do wear gloves when cleaning the jalapeños, and stand back from the disposal after tossing all those seeds down it before turning it on too; but I am sensitive to it.

Eggplant Antipasto

Fantastic. I don't bother peeling the eggplant, and I personally don't like mushrooms or olives. I substitute zucchini for the mushrooms, and 1-2 tbl of capers for the olives. Instead of the vinegar sugar combo I followed others suggestion and just use balsamic vinegar to taste-1/4 cup probably. If possible I add fresh herbs instead of dried, and cook it longer than 30 minutes, 45 more likely. Great with fresh soft/crusty bread or over pasta.

Fruited Curry Chicken Salad

I used dried cranberries instead of the raisins, and took another reviewers advice and just used the food processor. Easy and delicious for summer. Great with mini pitas.

Eggplant Parmesan II

Just for me, so only used one eggplant; followed the suggestion to parboil for 1-2 minutes and cool and dry fully. Only needed one egg and about 10 minutes per side at 375.

Spinach Alfredo Pizza

Used a Boboli, spread some chopped garlic on the crust first. I only used about 7oz of spinach and layered that, then the artichokes, then poured jarred Alfredo sauce over all.

Lentil and Smoked Sausage Soup

I didn't make this vegetarian, using smoked turkey sausage instead. I waited until about 10/15 minutes before serving to add the cabbage so it retained some of it's texture.

Garlic Parmesan Orzo

Absolutely delicious! I halved the recipe and it made a perfect side for three people. Also, to reduce pots, after draining the orzo, I used that pot to cook the garlic and butter. I added a little bit more milk as the orzo absorbed it almost immediately.

Banana Banana Bread

I followed the advice of another poster (ANJOULEME Reviewed on Jan. 1, 2004) and used a greased muffin tin. Cooked at 325 for 25 minutes and they came out perfectly. I also added a tsp of vanilla.

Slow Cooker London Broil

Super easy! I had a smaller cut of meat (just two of us) so there is lots of leftover gravy to use in another meal. We are not mushroom lovers so I substituted with cream of celery and it was still good. Added some red wine, Worcestershire, onion and parsnips to the crock pot and cooked it all together on low for about 9 hours.

Marshmallow Fondant

I am not a baker, but wanted to make a "steak cake" for my bf's 30th surprise party. This recipe was easy to follow and not too intimidating! I just used half the recipe, a hand mixer (with bread dough attachments) and tons of crisco on my hands, the bowl, the counter; basically everything the marshmallow was going to touch. I put it in the fridge overnight and had no trouble rolling it out the next evening. I was just using it as an offwhite, so the slight beige resulting from the vanilla was perfect.

Pesto Cheesy Chicken Rolls

I took others advice and decided not to roll them. I did wrap a piece of prosciutto around each breast, then topped with pesto and cheese. Baked covered initially, then removed foil for last 10 minutes or so to brown cheese. Served with Garlic Parmesan orzo also on this sight. Such a great meal!

Make Ahead Lunch Wraps

I usually reduce the recipe as I make them for one and don't want them to sit for too long in the freezer. I only use the one can of black beans, and instead of the can of tomatoes just slowly add salsa until it seems the right consistency.

Easy Roasted Red Pepper Hummus

If I am roasting the peppers in the oven(as opposed to store bought), I add the garlic as well so it gets a sweeter flavor. Also, I use fresh parsley in place of the basil. I add the tahini slowly and taste at intervals as sometimes I feel it overpowers the dip.
