The Best Stuffed Mushrooms

I decided to try out this recipe when we had friends over a couple of weeks ago. My husband and I figured you can't go wrong with cream cheese and bacon. They were a BIG hit! Everyone loved them and they were gone almost as quickly as they were served. I used the "baby bella" mushrooms, and sprinkled on a bit more fresh ground pepper as well as paprika before popping them in the oven - delicious! Will absolutely make again . . . and again.

Beefy Lentil Vegetable Soup

This was such a surprising recipe - much better than I anticipated and easy. I used fresh sliced mushrooms instead of canned and followed some of the other reviewers advice and "spiced it up" a bit - red pepper flake, paprika, a couple dashes of hot sauce. The end result was like a cross between vegetable soup and chili. Quite tasty.

Calico Rice

Delicious! Didn't change a thing. My husband loved it. And it went well with BBQ meatballs, though I suspect it would be even better with a mesquite chicken breast or fajitas.

Barbecued Meatballs

I think these would be better if you cut down on the amount of bread crumbs. The texture of the finished meatball is kind of soggy and off-putting. They were ok, but there is a A LOT of room for improvement on this recipe.

Chicken and Dumplings III

This is good for a "quick and dirty" version of chicken and dumplings. My variation includes breasts instead of thighs, one can cream of celery, one can cream of chicken, diced onion, celery, and carrots, salt and a couple dashes of white pepper. The family LOVES it.

Stuffed Green Peppers I

LOVE! Will make again - one change. Add garlic salt and fresh ground pepper to taste to the tomato soup gravy. Small step = big flavorful difference.

Scalloped Cheese Potatoes

Very good - I added minced onion and seasoning salt to the potato/soup mixture. Next time will probably mix in some cheese too, in addition to sprinkling it over the layers. Definitely use a bit more cheese than it calls for.

Pecan Pie V

EXCELLENT! My husband has a corn allergy, so we have to stay away from any foods using corn-related products such as corn syrup. He loves pecan pie though and I was thrilled to find this recipe sans the syrup. Bonus - it is one of the most delicious pecan pies we've ever tasted. I get so many compliments and recipe requests everytime I make it. Perfect!

Japanese Style Deep Fried Shrimp

So delicious! We made a couple of adjustments as we are watching our waistlines. Substituted Egg Beaters for the eggs and pan-fried in extra virgin olive oil rather than deep frying in vegetable oil. This cut down on the fat quite a bit, but I doubt we sacrificed any flavor! We love panko shrimp nights. :-)
