Cream of Pumpkin Soup

Reviewed: Nov. 7, 2011
too rich. the flavor is good, and i guess it lives up to the claims because it basically tastes like liquid pumpkin pie. but it was too heavy for any of my guests to enjoy. two bites and then it was overwhelming. on the plus side, it's great as a sauce on ricotta cheese or ice cream.

Strawberry Pretzel Salad

I use the sqaure pretzels--just personal preference, don't know if it makes any real difference! And full-fat everything :) Fat is less-bad for you than the extra sugar low-fat products have in them anyway. And fat = flavor.

Torsk

good. i didn't add enough paprika, so was a little lacking in flavor, might try some more spices next time--basics like garlic, etc.

Banana Crumb Muffins

absolutely delicious, perfectly moist! I used mostly fresh-ground flour and just added some gluten to even it out, and they turned out fabulously. Wonderful recipe!

Eclair Cake

Reviewed: Jan. 9, 2008
I made this for my mother's birthday, and it was a hit! Delicious! I also used one package regular vanilla, and one french (that's all they had left at the store!), and it turned out great. I also dipped the graham crackers in milk first, as someone suggested. Oh, I did use a recipe for the chocolate, which ended up going with the rest of it GREAT. 2 cups powdered sugar 3/4 cup unsweetened cocoa powder 1/3 cup milk 1/4 cup butter, melted 1 teaspoon vanilla extract

Honey Bran Muffins

Reviewed: Jan. 8, 2008
I was short on fruit juice, so I used half orange juice and half water. I also used half the amount of honey. Mine turned out just a tad on the dry side, but still great. I think this happened because I used freshly-ground wheat, which tends to thicken things up a bit. I used wheat bran instead of cereal, so maybe this also contributed to the thickness? I had fun adding things, such as apples, blueberries, and chocolate chips. So experiment a little! I also added some cinnamon, nutmeg, and allspice (amounts in that order), and drizzled them with honey while they were baking, as someone suggested. 17-18 minutes was the perfect baking time.
