Raspberry Star Cookies

These turned out great. Don't worry about getting the jelly exactly even because it bubbles and melts into a nice even puddle. My only adjustment was the bake time. My broken oven only bakes at 350 degrees and it took over 20 minutes. I took them out when they started to brown.

Simple White Cake

Nice basic white cake. I added 1.5 tablespoon sprinkles to get "confetti" cupcakes. Recipe make an even dozen cupcakes which is just enough for nearly any occasion without becoming a temptation. Make sure you really beat the butter and sugar fill fluffy to get a tender cake.

very good! An excellent whole wheat recipe. The strong flavors of molasses and spice really stand up to the whole wheat. I omitted dry buttermilk and raisins.

Easy OREO Truffles

I made these with tofutti "better than cream cheese" to make them dairy free. The consistency was easy to work with. I had no problem rolling the balls. I didnt want to bother with the chocolate coating so I just rolled them in the reserved cookie crumbs and that worked perfectly. These are quick and other people loved them but for me they taste like pre-chewed oreos. best served chilled.

Coconut Curry Tofu

This is amazing! Very flavorful, a complex flavor. I did not add the last tbsp of soy sauce as I thought the flavor was already salty enough. The coconut milk is very rich and creamy but because the rest of the ingredients are so low fat its ends up being perfectly healthy AND delicious. Served over brown rice. Next time Ill add some eggplant, jalapeno and cilantro.

Hummingbird Cake I

Very tasty, nice rounded top and tender crumb. A bit too sweet and too oily. Next time I will cut the sugar in half (only 1 cup) and cut the oil way down (maybe sub in some applesauce). I made cupcakes, 30 minutes was perfect.

I have made these many times since originally seeing the recipe on Chef John's Foodwishes blog. The sauce is sweet, tangy, spicy, perfect. The sauce is also great for grilled chicken legs

Anise Waffle Cookies

These are not pizzelles. I imagine if they were the title of the recipe would be Anise Pizzelles and the directions would tell you to use a pizzelle iron. Dont give this cookie a bad review because you assume its something its not. These are good and easy to make in a WAFFLE IRON per the instructions. I will try these again with the other suggested flavors as well. They were quick and would be great for the holidays.

I am a mediocre bread maker but this turned out really great. I did have to about 1 cup more of each flour but thats how it goes sometimes. I sort of deflated one loaf when I brushed on the egg wash so make sure you take your time and apply is carefully.

Old Fashioned Prune Cake

I replaced the buttermilk with almond milk + 1 tsp lemon juice to make this dairy-free. The cake had a nice texture, rise and color. Im a big fan of spice cakes and this one was good, but the allspice is really predominant so adjust to your tastes if needed. 1 hour in a bundt pan was right on and it came out of the pan easily.

Italian Wheat Rolls

I halved this recipe and it still made 12 nice large buns for hamburgers or sandwiches. I needed to add quite a bit more flour when kneading but the end result was still tender and soft. I think they would be good formed into hotdog/sausage buns as well. If I was making dinner rolls, they might be a bit large so make 48 from a full recipe instead of 24 (or 24 from a half recipe) Its very easy because there is only one rise and I form them and rise them right on a silpat lined sheet, then just pop into the oven. They bake quick too.
