Crustless Spinach Quiche

Great recipe! The changes I made were to use fresh spinach, 2 cups of a different cheese (I did Colby Jack, I'm sure you could use whatever kind you like), and to add a sliced tomato on top as I saw in some of the photos. My boyfriend and I ate the whole thing for brunch this morning. He really, really liked it.

Lemon Garlic Tilapia

I made this last night and it was great! Talk about no effort healthful cooking. My fillets were a little small so I made five instead of four, and I added a bit more butter and half a lemon's worth of juice. We bought a big bag of individually packed fillets, which were easy to defrost in the sink with some lukewarm water (still in the bags). Now that I know how easy it can be, I will probably use frozen fish all the time. When you live away from the coasts (Iowa in my case), frozen is the way to go. Also, my boyfriend thought they needed a touch of salt, so next time I will add that. Thanks for the recipe!

Chocolate Eclair Dessert

Delightful. I'm only giving it four stars because I've been using the homemade chocolate sauce suggested by reviewers ("Mix 1/3 cup cocoa, 1 cup sugar in sauce pan. Add 1 teasp vanilla, 1 stick butter, 1/4 cup milk. Boil for 1 minute, then set aside to cool.") I made it once the night before, once the morning we were going to eat it...both times the graham crackers were delicious. Doesn't seem like the whipped topping really has to be thawed, by the way. Leftovers will last several days (provided you don't eat them first!) This is a simple yet delicious recipe. It's been a big hit and I plan to continue making it for gatherings! Thank you!

Thick Cut-Outs

I was in the market for a big, soft sugar cookie and this recipe didn't disappoint. The only change I made was to add 2 teaspoons of vanilla and one teaspoon of almond extract (per other reviewers' suggestions). These cookies represent a big investment in time, effort, and ingredients, but I think they're worth it! I didn't make the frosting because I already had some leftover. They were great for Valentine's Day. Thanks!

Avocado Mandarin Tossed Salad

My boyfriend and I made this the other night and loved it--the combination of mandarin orange and avocado was to die for. I had to figure out how to toast pecans (ended up spraying a cookie sheet with cooking spray and baking them in the oven at about 350 for maybe five minutes). We omitted the green onions because we forgot to buy some. Made with baby spinach and used Newman's Own brand dressing. Thanks for a great salad!

Black Bean Pizza

I just made two of these for a dinner party last night and there was only one slice left when all my guests had gone home--and then my boyfriend and I polished it off. I'm excited to make this for my vegetarian roommates in the fall (and for myself, too!) Easy, tasty, and cheaper and healthier than delivery or frozen pizza--you won't regret making this.
