2-Step Skillet Chicken Broccoli Divan

Really good. I actually sauteed some onions first in about a T of oil, seasoned the chicken pieces with garlic powder, season salt and fresh ground pepper (before sauteing) I added some of the same spices to the milk/soup mix, using 1 can worth of the milk. I also added a little more cheese than called for. Later I felt that it was good but still needed a little more salt and pepper. I'm surprised there are no spices called for at all in this dish. With the white rice I served it with, it would have been extremely bland but the spices made it a real hit. I think this gets a 4 because even though there were no spices, it was a minor fix and the basic recipe is very easy and very good. And fairly healthy as well and inexpensive as well. I also used fresh broccoli. I think that frozen would have been too mushy. Just my 2 cents. :D

Baked Scalloped Potatoes

I went ahead and gave this 4 stars but I'm a little on the fence about this recipe. It's "good" but it's not what I was expecting at all. It was more like the potatoes and sauce I have had cooked with pork chops than scalloped potatoes. I did add the ground mustard and paprika and 1/2 c. grated cheese to the dish as well as some salt and pepper, before baking. I did use the onions. It was good, especially for being low fat, but I don't feel like it screams "scalloped potatoes" for me. I will make it again, but maybe try some low fat velveeta or parmesan or something to give it that extra umpf I'm looking for... Still, great recipe, so glad you shared it! OH! - Also I used cream of mushroom soup. Next time I will use cream of chicken and see how that turns out! :)

Apple Stuffed Chicken Breast

I thought this tasted pretty good. I didn't use wine, I used chicken broth instead and omitted 1 c. of the water altogether, though I would use less of the cornstarch!!!! I had to use chicken thighs since I was out of chicken breasts, but it was still good. I think next time I will use the same basic ingredients but cook things my own way to save time. Everyone seemed to enjoy this meal. I'm only going to give it 4 stars though because it is more time consuming then I anticipated and I do feel it needs a little more something. Oh, I also added salt and pepper and garlic powder to the chicken while browning. Great recipe! Thank you so much for sharing!

Bow Ties, Zucchini, Carrots, and Chicken

This recipe made SO much food!!!! Way more than expected. I made some changes... I added onions, browned the chicken by itself with salt, pepper and garlic and then kind of stir fried all the veggies... I didn't use as much of the garlic, probably 8 cloves worth instead of 12. I used some corn starch to thicken the "sauce" though it didn't thicken much but it's ok since I didn't use as much water, therefore it coated the pasta without leaving a mess at the bottom. The cheese did not melt into the sauce, it globbed together. I had to fish it out and then add Parmesan as a topping instead. I used the full amount of carrots but couldn't even fit the full amount of zucchini in the large, deep skillet I had! That's a heck of a lot of veggies... I had to cook things in stages and add it to a humongous bowl afterward, to toss everything together. Next time I will definitely halve the recipe. 5/6 people in my family liked it. I served this food with honey-yogurt berry salad and a green salad to make a filling but low fat meal.

Asparagus Roll-Ups

I gave this a 4 because I'm unsure whether or not I actually like asparagus at all, I was testing a couple different recipes... this one was the best one of all though... a little rich, but good. I don't know if I'll make it again though.

Sweet Potato Casserole II

A hit at Thanksgiving! I did alter the recipe according to what the reviewer "Lisa" said to do. I did feel that it was still a little too sweet but it was so great! Thanks for this great recipe! PS I hate sweet potato casserole with marshmallows, what a great alternative!

Pumpkin Waffles with Apple-Cranberry Relish

Excellent! I used just the Apple-Cranberry Relish at Thanksgiving and it was such a hit! I didn't alter the recipe at all except that I let the fruit sit until it soaked up the sauce. Everyone loved it!

Bread Pudding II

I'm currently living in another country that doesn't have the same quality of ingredients as the US. Shelf stable milk vs fresh milk. Better eggs. Denser bread. An egg bread or cinnamon bread is more dense, even regular white bread is probably more dense in the US than here in the D.R. The way I made this, the recipe fed 3 adults and 2 children, with no leftovers, instead of 12 servings. Perhaps better, denser ingredients would up the serving size. Still pretty good considering, I'll definitely make this when I go back to the States.

Easy Sugar Cookies

These didn't rise as much as I'd like but they were still pretty dang awesome. I'd say use at least a Tablespoon of dough per cookie just because the bigger ones I made turned out a little bit better, a little thicker and softer/chewier rather than crunchier.

Funnel Cakes IV

I really debated between 4 and 5 stars on because I would definitely add more sugar in the actual batter, just because I don't like a lot of toppings and appreciate the cake itself for what it is. I don't think that this cake is quite sweet enough otherwise. Still it cooked up really nicely, was light, crunchy on the outside and fluffy inside. Not too oily or heavy! Made an ample amount of funnel cakes, I had enough to send some to a neighbor for breakfast as well. I'm really very pleased by this recipe, thanks so much for sharing it!

Homemade Biscuit Mix

EXCELLENT! I'm currently living in the D.R. as a missionary. Finding biscuit mixes is really difficult and sometimes expensive! I'm sooooo, sooooo happy and thankful to have found this recipe! My husband was very pleased, and he's really picky. My kids gobbled it right up! And even though I had to use shelf stable milk, they were STILL good. I used about 2/3 cup of milk and mixed in enough mix to make a soft dough, for drop biscuits. THANK YOU THANK YOU THANK YOU!!!!!!!
