Ranch Dressing II

Reviewed: Dec. 23, 2008
I reviewed this recipe a few years ago, and wanted to re-review. I took a hint from another reviewer, and now use equal parts mayo, sour cream, and buttermilk. I also use only sea salt, and I double the amount in the recipe. If this is too thick, add more buttermilk to keep from diluting the taste. I was never a ranch fan, and made this for my stepkids, but now I love it!! Original review: The kids could not believe this wasn't from the package. I was thrilled that it had the great taste of Ranch with none of the chemicals in the packet. I diluted it quite a bit because I like thin dressing. I mixed it according to the recipe, then added plain milk til it was the consistency I wanted. Thanks!

Dawn's Candied Walnuts

Reviewed: Dec. 23, 2008
YUM! I used pecans because I had a ton of them, but otherwise followed recipe exactly. I made these for my man and he loved them. Delicious on their own, in a green salad, or over ice cream. I had them over chocolate ice cream and the touch of cinnamon in the nuts was a divine complement. Highly recommended! Thanks for sharing the recipe.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 23, 2008
The creamiest, most delicious fudge. Made this as one of my Christmas goodies, and am so pleased with the results. I did make changes because there was soooo much sugar-- in the marshmallow, in the chocolate chips, plus an entire cup of white sugar. First, you can skip the milk chocolate chips for convenience-- it turns out great with all semi-sweet. Next, decrease sugar to 1/2 cup. Last, I used 2 1/2 cups semi sweet chips, and one square of unsweetened chocolate to keep the chocolate flavor strong without it being too sweet. Delicious!! Mine came out dark and creamy. Heaven!

Pumpkin Casserole

Reviewed: Dec. 6, 2008
I took everyone's advice and used 1/2 cup of sugar. I served this with a roasted turket breast, and green beans. The kids asked for seconds! Our 11 yr old asked if we could have it all the time. Wow!

Perfect Pumpkin Pie

Reviewed: Dec. 6, 2008
This was my first pumpkin pie attempt-- I have always opted to make something fancier-- so I was nervous about being the sole supplier of pumpkin pie at our Thanksgiving dinner. I needn't have worried. These pies (I made 2) were delicious and beautiful. And easy! Perfect!

Pecan Pie V

Reviewed: Dec. 6, 2008
This was a hit at Thanksgiving. Here is what you need to know: if you have crazy picky people who are expecting the supersweet gel-like base of a traditional corn syrup pecan pie, find another recipe. If that is not the case, this pie is delicious. Sugar caramelizes when it cooks, corn syrup does not. This pie is rich and dense with a deeper, not so sticky sweet flavor.

Apple Pie by Grandma Ople

Reviewed: Dec. 6, 2008
My friend's husband who does not eat sweets asked for a second piece! I mixed 2/3 of the syrup with the apples, then did the lattice top, then poured remainder over. Gorgeous! I also added 1 tsp of cinnamon and a scant Tblsp of vanilla to the syrup. This is now my apple pie recipe!

Overnight Coffee Cake

Reviewed: Dec. 6, 2008
If you need something special to serve with breakfast, make this! Not the most amazing coffee cake ever, but the fact that you can do all the work the night before makes it five star. The house smelled incredible! I used 1/2 white and 1/2 whole wheat flour, and the kids gobbled it up!

Best Beef Dip Ever

Reviewed: Dec. 6, 2008
I am always suspicious of a recipe title like this, but I gotta say, it really was the best ever. Cheap cut of meat, stupid easy, and really delicious! My man loved loved loved it. The kids were not into the au jus, but loved the meat. Served on soft brioche buns from Trader Joe's-- yum!

Spinach Salad with Pepper Jelly Dressing

Reviewed: Dec. 6, 2008
Really different! I made this for our lunch today, and since the kids weren't here, used hot pepper jelly. Delicious!! The goat cheese cancels the heat and tastes great. Also makes an impressive presentation. I served this with canned soup, and lunch came together in less than 10 minutes. In the South, we always had pepper jelly poured over a brick of cream cheese to eat on crackers at holiday parties. I was excited to try this because pepper jelly reminds me of Christmas! Will make again and again!

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 5, 2008
You must try this!! It is so tasty, and so unbelievably easy. You will make it again and again. I use frozen chicken breasts, frozen chopped onion, one can crm of chicken, one can crm of mushroom, skip the butter, and I use water instead of reviewer recommended broth to cut the salt. Let this cook all day, then break up the chicken, add frozen peas, and turn to high. Stir peas in, and let cook while you cut up one can of biscuits. Put biscuits, pushing them down into soup-- they'll pop back up when they're done-- and cook for another hour or until biscuits are done. This is rich, so I serve it in a bowl with a salad on the side. I have also added corn. Celery and carrots would be good but the kids do not like them. I would use fresh and add at the beginning. Always a hit!
