Lola's Horchata

Reviewed: Mar. 23, 2013
I did what a few reviewers did and ground my rice in a coffee grinder then blended it with 2 sticks of cinnanon. We also changed out 1 cup water for 1 cup 2% milk because we like ours 'creamier'. The trick to getting full-flavor horchata FASTER is to mix the milk and vanilla in with the ground rice when it sits overnight then strain and add in 1/3 cup sugar (2/3 was waay too much).

Unbelievable Rolls

Reviewed: May 9, 2011
Just made a half-batch of these and gotta say they're pretty good. I used bread flour but otherwise didn't change anything. Didn't have any problems with rise or density but I will agree with other reviewers in saying that this is a very sweet roll so just be warned.

Beef Tenderloin With Roasted Shallots

Reviewed: Aug. 5, 2010
Omitted the tomato paste and bacon but this still turned out great, i think this gave it a simpler cleaner flavor which gave the other ingredients more individuality. Served on top of lightly sauteed spinach with a side of mushrooms (for picky eaters). Will definitely be making this again!

Outrageous Chocolate Chip Cookies

Reviewed: Mar. 18, 2008
I was surprised by the strength of the peanut butter in this cookie but it was still enjoyable, and the texture was great. Maybe next time i'll cut down on the pb and white sugar and up the brown sugar to make a more subtle cookie since i don't like mine too sweet. I used skippy which is pretty sweet so maybe a homestyle pb might be what i'm looking for.

Tilapia Pitas

this recipe is pretty delicious and easy, I just threw in some fresh dill that i had into the sauce and seasoned the fish with some greek seasoning and chopped dill as well.

Peanut Butter Chip Chocolate Cookies

Reviewed: Dec. 12, 2007
Cut the sugar and baked some on a silicon sheet and some on wax paper on a cookie sheet. The cooking times varied but you just need to keep an eye on them. They all came out pretty solid but not hard, moist but not too chewy. A very good overall cookie texture in my opinion. I would recommend not using Reese's peanut butter chips, however, as they were way too sweet and overpowered the cookie. This isn't the recipe's fault though. Next time I'll try to find another brand of chips or chop the chips and use a smaller amount since I don't like my cookies terribly sweet.
