Whole Wheat, Oatmeal, and Banana Pancakes

After reading the other reviews I added an extra banana (I had 2 very ripe bananas) and omitted the brown sugar, and used olive oil instead of vegetable oil. I was surprised at how fluffy these turned out. I can't wait to try with apple or pumpkin as other reviewers suggested.

Jalapeno Popper Spread

I was skeptical at first because it tasted very much like mayo when it was cold. I took it for a work potluck, threw the ingredients in a small crock pot to make/keep it hot and stirred in the parmesan cheese instead of putting it on top. Served it with garlic melba rounds. A hit!

Fruit Cobbler

I used a little over 3 cups of frozen mixed berries instead of peaches and light vanilla soy milk instead of regular milk and it turned out fantastic.

Banana Muffins II

I only had smaller bananas, so I used 4 instead of 3. I used brown sugar instead of white, and I think it turned out a bit too sweet. Not sure if it was the extra banana, or the sugar. I added some vanilla, nutmeg, and cinnamon which added great flavor. Definitely a keeper.

Honestly one of the best recipes I've made from this site. Added a little vanilla, nutmeg, and cinnamon as others did and they are phenomenal. I would give it 6 stars if I could!

Amish Breakfast Casserole

I made this for a work meeting and it went FAST. I substituted turkey bacon for the regular bacon, lowfat cheddar, and used a combination of Swiss and Gruyere cheese instead of just Swiss. Very tasty!

Coconut Macaroons III

Very good and easy, especially since it was my first time making them. I took the advice of some other reviewers and added 1/2 tsp of almond extract. I think I cooked it too close to the bottom of the oven because the bottom was too brown, but my parents were highly impressed. Adding a chocolate drizzle on top makes them fantastic!

Stovetop Granola

So yummy and easy. I took the suggestions of others and increased the amount of oats to 3c instead of 2. I didn't let my pan cool enough between toasting the oats and adding the butter, so the butter browned too quickly. Next time I will try adding some vanilla.

Sophie's Zucchini Bread

I have been using this recipe since 2001 and I love it! I omit the walnuts (most people I share this with are not a fan), make sure to lightly squeeze the zucchini before mixing it in, and sub 1/2 applesauce/1/2 oil instead of the full amount of oil. Fantastic!

Cinnamon Cream Roll-Ups

These were a hit at my work potluck. Per some of the other reviews, I reduced the sugar to 3/4c with the cinnamon for rolling and only used 1/2 the cinnamon/sugar mixture when I initially started rolling and added the second 1/2 halfway through so it didn't get too clumpy. Rolling with the cream cheese mixture helped them stay sealed. Definitely a keeper!
