Broccoli Cheese Casserole

Reviewed: Dec. 7, 2013
This recipe is in rotation at my house. My 4 yr. old always request it. Very delicious and it makes a large serving amount. I use fresh broccolli gently boiled to just tender. I cook my rice seperately as well. Combine the soup, milk, and jar of cheese whiz in large bowl add my seasonings (garlic powder, onion powder, white pepper and dash of salt and corriander powder) then add the cooked broccolli and rice stir and put in large rectanglar glass baking dish in oven for 20 min until it browns on the top. So yummy! Goes well with several main dishes!

Very delicious. I used two 10 oz boxes of frozen spinach, drained really well as other suggested. I added 1/2 cup more sour cream and used Lipton's veggie soup mix and it was really good!!

Award Winning Chili

Very good and very hearty. Next time I will omit the carrots and use less meat and more beans. Other than that this chili was a hit.

Shepherd's Pie VI

Reviewed: Nov. 5, 2008
Really good recipe. I followed the recipe exactly with the exception of adding sweet peas as one of the photos suggested. My boyfriend raved about it and my 2 yr old son seemed to really like it. Very easy to make and cost efficient. I will be adding this to my favorites.

Sweet Potato Pie IX

Reviewed: Nov. 2, 2008
Way too sweet! This took away from the spices. Next time I will cut sugar in half. Also too many eggs, it came out airy and fluffy. Overall this was like eating spice cotton candy (not quite but almost)I also added 1/2 tsp cinnamon as suggested but next time it will omit the cinnamon, use half sugar and 2 eggs. This recipe has potential but you must tweek it. UPDATE: After making it the first time as the recipe stated, I still believe it was too sweet, however my husband loved it this way. When I wrote this rating I ate a piece right after it came out of the oven. But the next day after it had time to settle, it wasn't as fluffy and airy. I made it a second time with less sugar about 2 cups and 3 eggs, 1/4th cinnamon and evaporated milk and it was PERFECT. When it has time to settle its wonderful!! So I take back what I said and give it 5 stars with some tweeking.

Chicken Florentine Casserole

Reviewed: Jun. 26, 2008
This was really good. Lots of flavor and very filling, definitely a keeper! I cubed my chicken sauteed in white wine, butter and garlic, then added fresh mushrooms set aside. In same skillet I sauteed fresh spinach as others suggested with a splash of white wine and garlic, layer bottom of glass dish. In seperate pot mixed half can of soup, lemon juice, half and half, parmesan and italian seasoning together,I let this simmer. Layered chicken mushroom mixture, then sauce topped with fresh bacon bits and mozzorella cheese. Served with steamed brocoli and garlic bread! My boyfriend it was really good and flavorful...will make again.

This is ok. I would recommend using an egg and crackers not bread. Will not be making this again. Will stick to the traditional meatloaf.
