Chai Tea Mix

I'm so happy I stumbled upon this recipe. With a few minor changes, it was perfect. I wasn't able to find any instant tea, so I made it without the tea, brewed a bag of orange pekoe, and then added the mix to taste. Also, as I made it for gifts, I made some with sugar and some with Splenda. The sugar recipe was too sweet, so I added about 1/2 a teaspoon more of each spice, 1/3 cup more non-fat dairy creamer and skim-milk powder. I also reduced the sugar to about 1 1/2 cups. With the Splenda version, I could not use the vanilla flavoured powdered non-dairy creamer, as it was sweetened with sugar. I also found when I added vanilla to the Splenda, it did not turn out too well. So, I added the vanilla to the dry milk powder and let it dry before blending. It tastes fabulous. Here's hoping it is appreciated by those who receive it as gifts!!!

Cioccolata Calda (Hot Chocolate Italian-Style)

Mmmmm... quite a nice treat! After reading the reviews, I made my own variation: A little less sugar, a touch of vanilla, and a (big) splash of International Delights Hazelnut Coffee Creamer. I always think you can't beat the combination of hazelnut and chocolate!

Mondi's Super Simple Chicken

I melted the butter and added two cubes of garlic and two cubes of basil (available in your grocer's veg/freezer section :)) and boneless chicken breast. The aroma was VERY overpowering, so I wasn't expecting much from the meal, but it was the best chicken I've had in ages! VERY simple, and soooo delicious. The recommendation for Pino Grigio is an excellent one -- by chance, we had that to accompany us, and they were perfect complements. That, with a bit of broccoli and balsamic rice, and we had the perfect meal.

Lemon Berry Slushy

After having had some strawberries sitting in my freezer for months on end, I looked for a quick way to use them and get an extra fruit serving in our day. I found this, and followed opal~/~butterfly's suggestion of only adding 1/4 cup lemon juice, and we both enjoyed it extremely! Will definitely make this again.

Soft Oatmeal Cookies

By far the best recipe for Soft Oatmeal Cookies that I have found! They taste great with or without raisins. They were a hit with all the people at my husband's place of work and with the whole family. Even after a number of days, although the outer surface became a bit tougher, the inside was still a beautiful consistency.

Bran Flakes Muffins with Raisins

A nice, quick recipe for Bran Muffins that really don't taste like Bran Muffins! Very pleasant tasting. As I didn't have shortening, I substituted butter. The only change I would make would be to shorten the cooking time -- I was not careful enough, and after 26 minutes, the bottoms of a few of them were a little dark.

I felt like a one-man comedy act when I made this recipe. As I used thawed ground beef, I should have waited to add water to the recipe. I ended up having to press the mixture to drain it before it was able to form balls. Once drained though, they formed nicely and fried up well. Instead of the stated 1/2 hour prep time, it took me at least double. I made the recipe with pureed plum tomatoes and do not recommend it. The sauce needs more flavour than my in-stock herbs and spices would allow. As an aside, I highly recommend NOT serving rice as a side-dish. With the recipe as is, I don't believe you need rice, potatoes or noodles on the side. They make a good meal with just a side of veg!

Chewy Oatmeal Cookies

This recipe is quite easy to make. Baking time is very important though, because if you overbake it, they won't be chewy. Unfortunately, I had difficulty finding the right baking time to keep them chewy a day later. My husband loved them, but I felt there was just too much butter in the recipe for me to enjoy them.

Absolutely Best Brownies

The boys at my husband's workplace beg him almost daily to bring in more of these brownies! I first found this recipe to use up some self-rising flour, but feel they are even better with plain flour. They're quick and super-easy to make, and taste delicious! (Especially warm out of the oven with some vanilla ice cream!) If you're wanting them a little more moist with a crunchy top, try making it with only one egg and a splash of milk.
