Grandma's Hash Browns

Great simple recipe. For years I was making gray soggy hash browns. But these are restaurant good. Make sure you cover the potatoes when you refrigerate or they can turn gray.

Boston Baked Beans

Yum...I skipped the overnite soaking and cooked the beans on high in my crockpot for 3 hours with twice as much water as beans. Then I added all the ingredients (used only 1/4 lb of bacon instead of 1/2) except the salt. I cooked in the crockpot for 3 more hours and then added 1 teaspoon of salt instead of 2 and left it uncovered for an hour to thicken the sauce. I don't know if it was just my crockpot but the beans came out tender and perfect. I made brown bread to go with it.

Cake Balls

This was just ok for me. I wouldn't make them again. The coating was what killed it. I'm sure they would have been much better if they had a real chocolate coating but you need kind of alot of chocolate to cover all the filling. I needed more than 3 oz. *post note* changed my rating from 3 stars to 4- for some reason they were much better then next day. I may make them again after all. I will definitely use real chocolate next time though.

Playgroup Granola Bars

Great bars! Best the next day. I used only 1/2 cup of sugar and they came out plenty sweet. I also used whole wheat flour and added some pecans. I only cooked them for 20 mins and that was perfect. Now my problem is- I can't stop eating them! As yummy as they are, I estimated the fat content to be about 6 grams of fat each (which is great if you can eat just one or two a day, but...). Next time I'll try halfing the oil and using some applesauce as some reviewers suggested.

Fluffy Two Step Cheesecake II

This is really more of a cream pie than cheesecake. The picture with the firm little cheesecake squares has to be from a different recipe- this is no where near that pretty but it is delicious. I only used 1/2 cup of sugar and it was plenty sweet. I also arranged strawberry slices around the top which made it even more guilt free. Oh, and I used half light cream cheese and half fat free and light whip cream. With half the sugar and the strawberries I would rate it as 5 stars but I think it would be too sweet for me as written.

Black Bean Brownies

I was gonna give these 3 stars because neither my husband or I liked them. But then my two daughters came home from school and scrarfed them down and raved about them. Both girls HATE beans. So, 4 stars for getting my kids to eat beans.

Bake Sale Lemon Bars

These were so much better than the box mix lemon bars I always made and less sticky too. Next time I will add 1/4 cup more sugar just because I'm used to really sweet bars. *post note- I made these with the extra sugar and they were so so good!*
