Penne Pasta Salad

This is a great little pasta salad! I was looking for something light to try an orzo salad, and this is perfect. Because my pasta is tiny, I used my food processor on the veggies, and was forced to use a sweet onion rather than a red. However, even with those minor changes, the results were lovely. Excellent lunch, and I'm looking forward to tomorrow's leftovers.

Best Ever Creamy Soup

This soup has a fantastic flavor. My husband had oral surgery and needed something totally soft to eat; so we pureed the whole thing, broccoli, cauliflower and all. It was really tasty and had a great texture. However I am really looking forward to trying again with the original recipe when his mouth is healed.

Pumpkin, Sweet Potato, and Leek Soup

Awesome! I made this with butternut squash instead of the pumpkin, and roasted the squash and potatoes first, mostly to break up the prep time. I also omitted the cream, as the soup was so rich and tasty on its own.

Apple Pie Filling

I had fewer apples, and rather than do math, I just went all screwy with proportions. So I ended up with a lot more liquid than I wanted. To solve that, I scooped out the perfectly cooked apples with a slotted spoon, added a little more cornstarch and simmered the liquid a few minutes longer.

Sun Dried Tomato and Pine Nut Stuffed Beef Tenderloin

Cheese Ball I

Very good! I got lots of compliments. I will definitely make this again, even though I really hated the part when I had to "touch" the sticky cheese mixture to make it a ball.

Quick Poached Salmon with Dill Mustard Sauce

We've tried this recipe twice now, once without the sauce and we modified the poaching liquid. We didn't have scallions, and were going for a lemon theme, so I included some lemon zest and juice in the wine/water mixture. Very nice. The second time we followed the recipe to the letter and found it fantastic as well. Thanks!

Guinness® Corned Beef

Loved it! Served this for company tonight for an early St. Patty's; it got rave reviews. We used the slow cooker method, and during the last hour added carrots and parsnips and turned the cooker on high. Very tasty.

Applesauce

Very good applesauce. I went ahead and pureed mine because I was looking for a smooth consistency. I also followed other reviewers advice and cut the sugar a lot. The simplicity of this recipe makes the results very gratifying.

Fancy Sammich

This was a fantastic recipe! We served it to company and got rave reviews. I didn't have very much in the way of "drippings" so my gravy was a little tangy (I added a beef bullion cube so it had some meat flavor). I'm wondering if other cooks had trouble with the pastry sliding off the meat, or if that's normal.
