Easy Coq Au Vin

Reviewed: Sep. 19, 2007
Everyone keeps saying how the dish is bland - I say just add a bit more garlic salt and chicken stock to the mix and it was extremely flavorful if you ask me. If you're soaking chicken in wine - what color do you expect it to turn except purple?? Anyhow, this is one of the best chicken recipe I've ever tasted. We added extra seasonings to the first "browning of the chicken", and although the sauce turns out a bit thin, it tastes delicious and makes the chicken very juicy.

heavenly! followed recipe almost exactly and the sauce turns out sooo creamy and flavorful. agree you need more chicken boullion, but that was the only change i made.

Chicken Massaman Curry

Reviewed: Nov. 14, 2007
this was absolutely amazing! i cut the fish sauce and the lime in half, but that is just personal preference. i also added a sliced up onion (big slices) on step two which adds a little something and whole salted peanuts on top as a garnish. all in all an incredible recipe. delicious!

Stuffed Green Peppers I

Reviewed: Jan. 9, 2008
fabulous! i used red peppers instead of green (because i like them better) which gave it a sweeter taste. used part of the cheddar cheese to top the peppers before baking and also used corn in the stuffing which was great! very good recipe :)

perfect! i agree, save the juice from the garbanzo beans so you can use later to adjust consistency, but it was delish!

Tuna Noodle Casserole II

Reviewed: Jan. 21, 2008
I made a few changes - used cream of chicken in place of the cream of celery soup, substituted cheddar cheese for the American cheeese, cut out the salt entirely, and used less garlic. Overall a great base to start with as noted by others. LOVED it!

Stir-Fried Chicken With Pineapple and Peppers

Reviewed: Feb. 6, 2008
the flavors were very good once the pineapple juice cut the salt of the other sauce down - but i had a hard time with the proportions. at first it wasn't enough sauce, so i doubled it, but that was a little too much and made my veggies soggy near the end. i'm not sure what the trick should be here - maybe to thicken/heat the sauce separately so as not to sog-ify the veggies? well, it was pretty good in the end either way and the hubby loved it :)

Homesteader Cornbread

Reviewed: Feb. 20, 2008
que horrible! ok. i gave it 3 stars because i am sure there is no possible way this recipe can be as horrible as my cornbread turned out. it has to be me. any pointers on this one? my cornmeal completely separated to the bottom and the top (under a lovely golden brown layer) was gooey and uncooked even after 40 minutes. the whole production was oily, rubbery and awful. someone help me!

delicious. very easy to overcook, it happens too fast! so keep an eye on them and be sure to do a test batch to see how they work with your oven.

Whipped Cream Cream Cheese Frosting

Reviewed: Mar. 14, 2008
This tasted just great, but the consistency is not appropriate for "frosting" - it is really more of a whipped topping that you would put on fruit of some sort. Not sure how to make this thicken up better and not melt all over a cake??

Sunday Dinner Mashed Potatoes

Reviewed: Mar. 14, 2008
These were good - but I really felt we needed to cut down on the cream cheese by about half - it gave the potatoes a "gluey" consistency that was just not right!
