LOVE this recipe! Fast, easy, delicous! Have made it many times...am making it for dinner right now, actually. I stick pretty close to the recipe, except I don't measure...just pour on salsa until the fish is covered. I love cheese so I put as much on as I'm in the mood for. Same with the tortilla chips - just grab them out of the bag, crush them over the fish and pop it all in the oven. I agree that it can get a little watery in the dish, but it doesn't really affect the fish. I think you could strain the salsa a bit if it bothers you, but I don't really care. Great to make for a last minute dinner. I always have these ingredients on hand. Frozen guacamole thawed makes a good topper too if you don't have fresh avacado.
