Salmon Tango

This was amazing! I did make a few small changes to make the marinade a tad bit healthier. Instead of butter I used 1/4 c. olive oil. I also used 1/4 c. of honey instead of brown sugar. To cook, I broiled at 500 degrees for about 5 minutes on each side. D'lish!

Maria's Pepper Steak

Mmmmm...good! Made this mostly as written, but also added tofu, so I made a little extra sauce. My husband couldn't get enough of it. I took the advice of a few other people and stir fried all the ingredients separately and then made the sauce. LOVED this over rice...hubby couldn't get enough of it. I wasn't sure I would like it with the red wine vinegar, but the sauce had such a great flavor. Will definitely be adding this to my regular rotation and can see swapping out meats and veggies depending on what's in the fridge. Great, easy, versatile...thanks for sharing!

Roasted Beets with Feta

This was plate-lickin' good. I used green onion instead of shallots b/c that's all I had...paired with fresh parsley from my garden, it was summer fresh and delicious. The beets I used were golden & I just put them all in one pan and covered it with foil to roast. Peeling them was a bit of a pain, but it was well worth the effort. I also used a really really good balsamic, so I'm sure that contributed to the flavor - overall, a really really great dish.

Mexican Baked Fish

LOVE this recipe! Fast, easy, delicous! Have made it many times...am making it for dinner right now, actually. I stick pretty close to the recipe, except I don't measure...just pour on salsa until the fish is covered. I love cheese so I put as much on as I'm in the mood for. Same with the tortilla chips - just grab them out of the bag, crush them over the fish and pop it all in the oven. I agree that it can get a little watery in the dish, but it doesn't really affect the fish. I think you could strain the salsa a bit if it bothers you, but I don't really care. Great to make for a last minute dinner. I always have these ingredients on hand. Frozen guacamole thawed makes a good topper too if you don't have fresh avacado. Thanks for sharing such a quick and easy recipe!

Strawberry Avocado Salad

Very good salad! Loved the dressing, but agreed with another reviewer about adding some goat cheese next time for a little more oomph. Will definitely make this again!

Quinoa Tabbouleh

Great recipe! Based on another review I swapped out cilantro for the parsley and it was delicious. I was out of green onions, but I'm sure they would have been perfect. It did feel like it needed more zing so I added about 5 cloves of garlic - no joke - it had a good bite, but probably more than most people would like. I'm excited to add this to my regular rotation!!
