Honey Cornbread

Made this almost exactly per the recipe, except that I used half & half instead of heavy cream because that was what I had. I thought it was ok, but not my favorite recipe. It cooked up beautifully and I liked that it wasn't too crumbly, but the flavor and texture left a little to be desired.

Russian Tea Cakes I

These were ok, but not as good as others I've had. Mine seemed extra crumbly and I had a tough time rolling them in the powdered sugar...even after letting them cool a bit.

Kalamata Olive Tapenade

Made this to take to a cocktail party the other night...was not happy with my results. I followed the recipe exactly and thought the taste was way too sharp...the lemon juice overpowered and (I can't believe I'm saying this) there was too much garlic. In an effort to save the recipe, I added an extra dash of olive oil, then kalamata olives and finally a small can of plain chopped black olives to try to tone it down a bit. Was sad that it did not turn out after all the great reviews. :(

Sturdy Whipped Cream Frosting

OMG! Best. Frosting. Ever. I could have eaten the whole bowl. Slathered it on to the cake thick and messy...gorgeous! I didn't have any almond extract, so I was bummed about that, but I will definitely keep this recipe forever. I used Neufchatel cheese and heavy cream. Can't wait to try again with different extracts. I layered the frosting over a thin layer of peach preserves in the middle...the not-so-sweet flavor of the frosting will be awesome with the sweet flavor of peach.

Roasted Beet, Peach and Goat Cheese Salad

Totally d'lish! I had 4 beets roasted and wanted to make a salad with goat cheese...the addition of the fruit, nuts, oil and vinegar were tops. I skipped the greens (because I don't like greens) and used plums, finely diced sweet onions, olive oil & walnuts b/c that's what I had. Can't wait to make this again. I'm thinking it would be great with a little bit of fresh mint sprinkled on top. Wonderful summer salad!

Special Buttercream Frosting

Carrot Salad

Nice simple recipe...very fresh and clean. I prepared it exactly as written and felt like it was missing something, so I added the juice from half a lemon and a pinky finger's worth of fresh grated ginger....added just enough extra oomph to satisfy. The honey flavor is my favorite part though. Will definitely make again.

Mediterranean Quinoa Salad

The Best Rolled Sugar Cookies

Delicious cookies - couldn't stop eating the uncooked dough either! I did find it a bit sticky to roll, but honestly, I hate rolling out cookies, so my patience didn't last long. I ended up making little balls and then flattening them into circles with my hands. Not the prettiest, but will work for a bunch of 4yo girls who will be decorating them with frosting at a tea party tomorrow. :)

Chewy Granola Bars

Just made these and was very underwhelmed. I did skip the brown sugar based on some of the other reviews and only did a 1/2 c. of choc chips. It was sweet enough, but I also subbed canola oil for the butter b/c we're trying to cut back on saturated fats...I guess it needs the butter. :)

Easy Granola Bars

Just made these and they are ok. I skipped the butter and the coconut and halved the choc chips. Added an extra 1/2 c. each of the dried fruit and oats plus a 1/2 c. flax seed to make up for the missing coconut and chips. I think I'd like them better with all dried fruit and no choc chips. The bars were also a little dry, so I may make them one more time and add a splash of canola oil to replace the butter.

Slow Cooker Chicken Taco Soup

This was pretty good...my crockpot wasn't big enough to squeeze in the bottle of beer or the tomato sauce...I did use the liquid from the beans though, so maybe that's why. Tasted great, but wasn't that much easier than my regular chili recipe, so not sure I'd make it again.

Pizza Dough I

Made this tonight as written, except for using whole wheat flour instead of white. Turned out well...no chew to the crust, but tasted good and is great for a fast easy pizza dough. I'll probably look for another recipe that has more chew, but will keep this in reserve for nights when I need to make dinner fast. Thanks!

Ham Salad Spread

OMG! So good...strangely addicting. My only change was to skip the celery b/c I don't like celery. I used canola mayo to cut down on the cholesterol. Passed the hubby test too....spread it on whole wheat bread to make sandwiches for lunch.

Salmon Tango

This was amazing! I did make a few small changes to make the marinade a tad bit healthier. Instead of butter I used 1/4 c. olive oil. I also used 1/4 c. of honey instead of brown sugar. To cook, I broiled at 500 degrees for about 5 minutes on each side. D'lish!
