Tomato and Basil Pasta Sauce
I have made this recipe as written and have used it as a launchpad for more elaborate sauces by adding assorted meats and veggies. In my opinion, tomatoes are the perfect natural food and this sauce highlights them perfectly. I offer my undying gratitude to you, Carolyn. This recipe is outstanding.

Juicy Roasted Chicken
I gotta confess. I really *really* wanted to follow this recipe to the letter, but I ran into a problem: my grocery store was out of chickens! After a long bit of thought looking at the sorely lacking poultry shelves, I decided on a little (okay, not so little) tray of thighs. I liberally salted, peppered and onion powdered both sides of the thighs, laid them skin-side up on a broiler pan and proceeded with the directions. (I did skip the butter or butter-substitute products and the celery altogether given my predicament, and went with the original cooking time as the thighs were slightly frozen when I started.) I cooked to 180 degrees (took exactly an hour) and turned off the oven. 30 minutes later, I had the best-tasting thighs I'd ever had. I had set out on this journey to have a roasted chicken to use to make soup. I settled on thighs because I prefer dark meat. I ate only one of these jewels as is and will use the rest for the soup, but I have little doubt that I'll be revisiting this recipe again soon. Thanks for the amazing technique!

Chef's Steak Sauce
I kinda hate to be the one to break the streak, but honestly, this was okay. It wasn't bad, it has actually, a really nifty and unique flavor, but it didn't nearly rock my world as much as it did for the other reviewers. I'd have been better off with the store-brand B-2 knockoff: equally tasty and *much* less work. Tasty, yes, worth the effort, notsomuch. I followed the halved recipe to the letter, minus the cloves (which I didn't realize I didn't have). If anyone wants to try to convince me that that would have made all the difference, I may be willing to try it again, but otherwise, I'll stick with the bottle. (In all fairness, I really, really like the bottled stuff.)
