Veronica's Hot Spinach, Artichoke and Chile Dip

This is wonderful! I made it for a Super Bowl party last night and it was the only thing that was completely eaten! Such a hit! I have used another similar recipe over the years, but this is much better. The proportions are just right. This will be a staple in my recipe box from now on. Thanks!!

Slow Cooker Taco Soup

I'm sure this is wonderful the way it is but I had to use what I had in the kitchen. I used chopped jalapeno peppers instead of chilies, no black olives, a 28 oz can of chopped tomatoes, 1/2 can tomato paste, 1 28 oz can of water blended with the paste and then added to the mixture. I might try more black beans next time. This is very good with cornbread as a sidedish. Yummy, Yummy

Easy Tortellini Soup

This soup is really yummy. I think that adding the Parmesan to the soup while it's cooking is the kicker for this recipe. It gives it really good flavor. (Of course I always add a little on top in the bowl too!). I used low sodium broth because of my diet and it tasted fine. Even my little guy who doesn't eat soup enjoyed a bowl and for me, that is always a plus!

Baked Tilapia a la Paul

My husband the chef created this simple recipe and it never fails. You can also use Haddock leaving out the egg dip step.

Broccoli Casserole

Yummy, just like Mom used to make. I didn't have any lemons on hand but it tasted great without it. The only other change is that I melted the butter & mixed it with the ritz crumbs and sprinkled over the casserole. Otherwise, made exactly as written and my family loved it.

Fried Rice with Ginger, Hoisin, and Sesame

This recipe was too sweet for our tastes. I might try it next time without the bbq sauce and hoison sauce and just add more soy. That would make it a good basic fried rice recipe.

Spruced-Up Cheese Spread

I'm not sure what I did wrong, but this was terrible. My husband and son didn't like this at all and neither did I. The mayonnaise was too much. Maybe I will try again with cream cheese.
