Blueberry Zucchini Bread

This was a fabulous way to use up the ton of zucchini that was shared with me. I also got a great deal on blueberries, so went looking for a recipe that used both. Sooooo glad I found this. My husband and kids loved it. I made it as bread and as muffins. They were great for school snacks, breakfast, after school snacks, and as a side with chili. I probably made at least six loaves worth! Too bad I'm out of zucchini, or I'd be making more now!

Blackberry Cobbler II

Perfect! I've made this many times now, but the most recent time, I had a total of 5 cups berries (3 c blueberries and 2 c strawberries). I doubled the topping even though the filling wasn't doubled - it was even better with a higher ratio of topping. You just can't go wrong with this recipe!

Gourmet Sweet Potato Classic

It would be hard to mess this one up. I shopped on Friday night for Easter and the store was already out of sweet potatoes and heavy cream, so I had to use canned potatoes and evaporated milk. I had to sort of guess-timate what 5 potatoes would be equal to and I also wanted to make extra, so I did 4 large cans and changed the serving size to 12 to increase the other ingredients. It was absolutely delicious - could almost count as a dessert!

Creamy Orange Cake

I did this in a bundt pan, added orange zest to the icing, and decorated with sliced oranges. So moist and delicious! Definitely a keeper!

Bread Pudding II

Delish! I doubled the recipe and added a couple more tablespoons of butter. I also omitted the raisins and added chopped walnuts instead. As a final touch, I served it with the brown-sugar yogurt sauce (on the side) suggested with the pumpkin bread pudding recipe on this site. My husband said this was the best bread pudding I've made yet!

Chili Chicken Stew

This was soooo good! We had a chili/soup dinner at church and I made this based on how good the recipe looked - I know, I shouldn't try new recipes on other people, but this was one experiment that turned out well! Add a dollop of sour cream and a few crumbles of tortilla chips. Delish!

Easy Decadent Truffles

I gave this only 4 stars because as it is written, this recipe is not that exciting, but when you let them harden in the freezer, then dip in melted almond bark (chocolate candy coating) and roll in chopped almonds, they become worthy of 5 stars!

It's Chili by George!!

This was okay. I have better recipes. I will admit that I commissioned my husband to make this one day when I was highly medicated on pain killers and couldn't cook dinner. I know he followed it exactly. The only criticism is that it was a little too thick and heavy for my preference.

Seven Layer Taco Dip

Perfect party dip! Even for teens/college kids who normally just want junk food - they gobbled this up, veggies and all. I added just one thing: a tablespoon or so of cilantro mixed into the cream cheese/sour cream layer. You could sprinkle it anywhere, though - it gives it an extra kick of fresh tang.

Cheesecake Topped Brownies

I've made this twice and will make it many more times! It's perfect for when you want something a little more interesting than plain brownies, but not something as difficult and costly as a full-sized cheesecake. I did have a little trouble with it separating the first time, so the second time I swirled half the batter, then spread the other half on top. I also topped with chocolate chips as soon as it came out of the oven instead of using icing.

Chocolate Chip Cookies VII

These turned out perfect!!! I was out of butter, so I used the "ingredients" tool and put in margarine and shortening. This one came up and turns out they are better than the ones I usually make with real butter! DELISH! Thank you for sharing!

Mandarin Orange Cake I

This was good, but not especially exciting. If I did it again, I'd probably add some more oranges to the batter, maybe a couple tablespoons of zest. Nice, but not a gourmet improvement on a mix.

Tomato and Mozzarella Bites

I went looking for a "different" idea for an appetizer to take to a progressive dinner. So glad I found this. Everyone raved about them and they are so simple. I did cheat and bought a bottle of balsamic vinaigrette dressing, though. It worked perfect. LOVED the fresh basil. I'd never bought it fresh before and am now in love!

Chocolate Chip Banana Muffins

These were perfect! I lowered the temp about 10 degrees to keep the sides/bottoms from browning too quickly and they still cooked in the time allotted. My husband and kids gobbled them up. Will make this one again - many times, I'm sure!

Cube Steak Parmesan

This was a delicious way to serve a tough cut of meat. I'd only had cube steak as "country fried steak" before and was looking for something different. So glad I found this! I gave it an extra pound with my toothed meat hammer before breading it, and I also covered it with foil, lowered the temp about 10 degrees, and cooked a little longer to give it a chance to tenderize.

Chocolate Brittle Surprise

Everyone loved this, but I am going to try combining semi-sweet and milk chocolate chips next time. I typically do that in choc. chip cookies too, so maybe it's just my personal affinity for that balance of almost too bitter and almost too sweet. Still, great recipe and sooooo easy to make!

No Fail Pound Cake

Contrary to naples34102's opinion, in my opinion, I think this was a vast improvement on a plain cake mix (I used BUTTERY yellow). It got rave reviews at a church fellowship; no one guessed it was from a box. I didn't have any lemon extract, so I tried almond. I had just under a teaspoon left in the bottle, but used it anyway. It gave just a hint of something that made it taste DELISH! In my oven, I did only need to bake it about 50-55 minutes. Thanks for a great way to dress up a cake mix! I'm adding lemon extract to my grocery list so I can try it that way next time!
