Karyn's Cream of Crab Soup

This is by far the best cream of crab soup ever! I am also from Maryland, so the crab seasoning is a must...although we use JO Spice, a brand that is produced locally. In fact, lots of restaurants use JO around here. I made one small addition...just a dash of Worcestershire. Thanks for a great recipe!

Pumpkin Soup

Almost there, just a bit bland, again as another reviewer stated, probably the pumpkin. So, I roasted a sweet potato, used half of it. Worked in perfectly.

Mom's Breakfast Strata

My mother has had this (little different variation) for Christmas brunch for probably 20 years. We just love, love it. She never tore the bread, just buttered slices, then cut it into squares to serve. I will say that in my experience the cooking time is too short. I take it out of the refrigerator first thing in the morning and sit it on the counter till almost room temperature. That cuts down on the cooking time. And don't rush to serve it. It stays VERY hot if you make it with cheese.

Caesar Salad Supreme

This was fantastic. I must say that I was searching for a dressing recipe that most fit my memory of making Caesar, and this one was it. I have never used mayonnaise, and still didn't, but otherwise everything was right on! I never was a creamy Caesar person, which I guess the mayo makes it, so that's probably great, too. I did use a coddled egg. Didn't rate this to show my changes, rated it to thank you for getting me this far. Loved it!

Chicken Stuffed Peppers with Enchilada Sauce

I only had green bell peppers that needed to be used, but all of the rest of the ingredients. I cooked some rice, mixed it with a little bit of the mole sauce recipe, tossed with the chicken and cheeses, stuffed the peppers. Baked, then poured the sauce over top. Served with black beans. MMM

Best Cream Of Broccoli Soup

Finished product was way too thin for my liking. I almost knew that when I saw the amount of liquid to roux. Anyway, after making the soup I added a tablespoon of yogurt, it tasted amazing! Very good. I did add a little bit of garlic and tarragon. And fresh grated Parmesan on top! Very good recipe.

Strawberry Jam

The good, the bad, and the ugly. The good: Excellent recipe. The bad: I tried to get away with less sugar, that didn't work. As I used the gel test I realized I needed more sugar...didn't use quite all of the recipe amount, but almost. The ugly: I didn't use a deep enough pot and as I kept it to a rolling boil and it reduced, it spit and spattered all over the stove. All in all it was very worth it. Gel test made all the difference, thank you.

Three Bean Salad

Really excellent. I don't use white sugar so I sweetened with honey, to my taste. Threw in a can of corn, too. Made lots for our strawberry and soft crab fest!

Simple Country Ribs

The flavors were great. Extremely tender, but too dry for my liking.. AND I "boiled" very low. Perhaps I will use this recipe and braise in the oven, covered. Anyway, served with garlic mashed potatoes and stuffed mushrooms. Very good.

Feta Chicken Salad

Great recipe. I got a reduced price rotisserie chicken from the grocery, let it cool, cut up into bite sized pieces. Quick, quick, quick and easy! Stuffed a tomato with it.

Apple-Cinnamon Baked French Toast

Made this several times and it is great! Important to use day old bread as it soaks up the batter better and to try to bring it to room temperature before putting in oven. Then baking time is accurate. I sometimes place apples on bottom with some brown sugar and butter, then turn over. Good recipe just as is.

Dolmas (Stuffed Grape Leaves)

This recipe is awesome!!! Didn't have mint so I substituted parsley. Saw some other reviews, backed off of cinnamon a bit, but added a grate or two or three of nutmeg. Used a steamer basket, drizzled a little bit of oil and lemon juice on top. Whatever the method, the rice recipe is incredible, thank you.

My mother has made this as a Christmas Brunch for many years, with the addition of chopped ham pieces. I have added sausage or bacon from time to time. All time best, and reheats very well, so double the batch!

Simple BBQ Ribs

This was a 10 exactly as written. I did make a couple of additions. Had some Hickory Smoke Salt which I added to the boiling water and a dash or two of Worcestershire sauce. Carmelized under the broiler for a minute or two at the end with a little extra barbecue sauce. And, by the way, cooked the rice in the broth, froze the rest of the broth. Unbelieveable!! Thanks so much, I even have the start for next time.

Zucchini Bread II

This was great! Moist and dense. I had a lonely apple hanging out in the frig., so I chopped it up and tossed it in. Had a large zucchini which yielded more zucchini, used it all. Added some freshly grated nutmeg and a pinch of allspice, but not necessary to change a thing.
