Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

I am a HUGE fan of sticky rice from my favorite Thai restaurant, but we moved and I have been looking for a recipe ever since. This was awesome!! I actually bought sushi/sticky rice from an Oriental Grocery store and did everything else the same, except I reduced the first batch of sugar to 2/3 cup. I did make the sauce even though some reviewers said you don't need it. I found it DELICIOUS! I couldn't stop eating it! Just like the Thai restaurant I love!! I also tried it out on some friends who'd never had Thai food and they loved it! Thank you for this recipe!

I think this would have been good had I had all the ingredients so I'm giving it 3 stars. I did not have onion so I used celery and red bell pepper finely chopped. I still used some celery salt and extra garlic powder. I also did not have tomato sauce, so I decided to use a beef gravy I had on hand. I think those alterations would have all been just fine, but I made the mistake of using brown rice, b/c it's all I had. I knew I should probably cook it first, but didn't have time, so I figured it'd just have to cook longer. Well, even with an extra 20 minutes, the rice was crunchy. I think next time I'll use fully cooked brown rice. Other than that it was an interesting dish. My girls liked it other than the crunch, but I'm sure glad Hubby wasn't home for this one! :)

Almond Custard Filling

This was so delicious I wanted to just sit and eat it with a spoon....I did go by recommendations and did only 1/2 tsp almond extract and then 1/2 tsp vanilla...but that was mainly because I was using it on a white chocolate almond cake w/white chocolate almond frosting and thought I had enough almond already. I also had to improvise because for some reason the grocery store I went to did not have nonfat dry milk. So instead of that I used a 12 can of evaporated milk and eliminated the water. I did have to add 1 more Tbsp of corn starch, but it still turned out perfectly delicious! I will definitely use this as a filling as often as I can.. :)

White Chocolate Cream Cake

This cake was absolutely amazing...so delicious I could have eaten the whole cake! Unfortunately, there were a couple of issues I had. The cake itself was dry, when it cooled, so I had to layer wet paper towels on it, until it moistened back up. I think maybe 30 min. cooktime would have been better. Also, even though I did add 1 extra square of white chocolate to the frosting, the icing was super pasty. As my mother, who decorated cakes for years, tried to ice the cake, it was taking the cake off with almost every stroke, and then just coming off in sheets. We ended up having to 'patch' the holes, because that was the only way it stayed on..kind of like playdoh. Maybe we didn't ice it soon enough after making the icing (it sat at room temp for 15 min or so). That being said...while it looked terrible- it tasted like a professional wedding cake...to die for... will work on the icing and reduce bake time next time.

Pumpkin Cheesecake II

This was my first attempt at making cheesecake. I made it for a special occasion and my mother, who is a cheesecake connosseur, just loved it!! So did everyone else! It was a lot of work, but worth it. I made sure to slowly cool it down, in off oven, on counter, then fridge. I am not a fan of cheesecake personally, but this was DELISH. followed recipe exactly! Must make for holiday get togethers!

Curried Hummus

Sooo good exactly as is, although I sometimes add more curry (I'm a big fan). The only downside of this hummus is I cannot stop eating it!!!

Cinnamon Belgian Waffles

I did make substitutions, but they turned out awesome!! I didn't have vanilla, so I used almond extract. I also used 1/2 of plain lowfat yogurt and 1/2 c skim milk w/lemon juice for the buttermilk. I also did 1/2 whole wheat flour and 1/2 ap. I used sea salt, and upped the cinnamon to 1 tsp. I also added 1 Tbsp ground flaxseed for health. They turned out SOO good!!! The cinnamon flavor was not overwhelming and they were so light!! I think the egg whites makes all the difference!! Great recipe!!

Salsa I

This was really good! I was looking for something quick and easy that used canned diced tomatoes. I actually used one can of petite cut tomatoes and one can of diced tomatoes w/green peppers and onions. I also used 3/4 tbsp dried cilantro and added 1 Tbsp lime juice. Oh, and I added a can of green chilies (mild)Very tasty! Not spicy at all, but I need that for my light weight family ;P

Authentic Louisiana Red Beans and Rice

This is a SUPER recipe. I do agree with other reviewers about the salt. I think you should do about 50/50 chicken broth/water. Maybe if you have andouille, you don't need it. I used chx sausage. The 6 cups of liquid was not enough liquid(i probably ended up adding an extra 1 1/2-2 cups). But I also used the small red beans vs. large kidney beans. I used chicken sausage instead and only sprinkled a few dashes of cayenne(had a 3 yr. old to feed). Oh, and I had no sage. But overall I think this turned out REALLY YUMMY!!!

Cold Tuna Macaroni Salad

Honestly, I'm not sure where this recipe went wrong, but I have a hunch. It was SOOO bland! I followed this pretty close, except my pasta box was 14.5 oz instead of 12 and I chopped up only 2 stalks of celery (not a big fan)and added halved grape tomatoes when serving. I had to add a ton of salt and it just never tasted right....So disappointing because I was really excited about eating this. I think it was the mayo. I used light, but it was generic light(GV). Bad move on my part. I think if you just use light mayo-any light mayo, you are in for a disappointment. My tip? Go for a brand that you trust or the full fat :).I'm giving it 3 stars b/c I think if you do that, it has real potential.

Golden Sweet Cornbread

This was EXCELLENT! However, I changed it so much, I can't say I even made the original recipe, :P I only did 3/4 c cornmeal, due to reviewer sugg. I also reduced sugar to 1/3 and all I had was olive oil, so I fearfully used that instead, and then I added 1/4 cup applesauce. I also added a can of creamed corn. It ROCKED! I mean ROCKED! Did I mention it was good? :)

Incredibly Cheesy Turkey Meatloaf

This meatloaf is really, really, good. I have made it twice now, once with ground turkey breast and once w/just regular ground turkey (85/15). Both times were awesome. The second time was a little mushy, I'm thinking b/c of the extra fat. Each time I took the ketchup (or tomoato sauce ) and added brown sugar and barbecue to, and it is awesome. My husband ranted and raved about this, so it is now my regular meatloaf recipe. I use cheddar and cut it into smaller cubes. I also add finely chopped onions. YUMMMM......

Kickin' Collard Greens

This recipe is REALLY good. I liked how much liquid it used. They turned out really tender. I didn't use bacon, but put extra olive oil and salt before adding onions. I did add a splash of vinegar at the end. I followed everything else to the 'T' and they turned out great. The only thing I would do next time would be to follow one reviewer's advice and add 1 Tbsp of brown sugar to make them a little less bitter. Otherwise, really really good and easy!!

Oatmeal Banana Nut Bread

I am so shocked at how delicious this bread came out! I followed some recommendations to make it a little healthier and was afraid it would make it not so good. It was between this bread and another 'unhealthy' recipe on this site and I picked this one b/c of the oats.I used 1/2 whole wheat flour and 1/2 all purpose. I used LIGHT Smart Balance instead of shortening. I used brown sugar instead of white (I was out of white). I used 3 large very ripe (almost black) bananas. I added 1 tsp of cinnamon and 1 Tbsp wheat germ. I also only had pecans. I made the recommended oats/brown sugar/cinnamon topping and sprinkled it before going into the oven (at 300 for 70 min). This made it pretty, good and different, but don't feel it was necessary for this to be good. This bread is SOOO moist, SOO flavorful and a great texture for banana bread-not too cake-y not too dense. This will be my basic banana bread recipe from now on. Pretty healthy and delicious...what a great combo!

Basic Cream Cheese Frosting

This frosting was good! Very creamy. Big hit w/family. A little on the soft side, IMO. May try refrigerating it for a bit before frosting. I did have butter and cc at room temperature and it turned out so smooth and whipped up fast. I used all the sugar, b/c I don't like the cheesecake taste and although it was good, I may add a little more next time or look for a more sugary thick cc frosting. Worked well on a 2 layer 9 inch cake. Used all the icing.

Avocado, Tomato and Mango Salsa

If there were 10 stars I'd give it 10. This was AMAZING********** I did use dried cilantro and omitted the onion and olive oil. Didn't miss it a BIT. I also only had lemon juice so had that instead of the lime. I had it on chicken breast, as a dip w/blue corn chips and in my salad w/salmon... TO DIE FOR each time. Highly, highly recommended. Can't wait to make again!!
