Shredded Brussels Sprouts

I have made this dish many times. Most times I don't even add the pine nuts and it is still amazing. Most recently I added a bit of shredded parmigiana and it was super delicious! Love this recipe.

Goat Cheese and Arugula over Penne

This was super yummy and easy to make. I sauteed the garlic in the oil first and this worked perfectly. Great as is but I think it would also be wonderful with some crumbled pancetta too. Will try that next. Either way, this recipe is a keeper!

Asparagus 'Guacamole'

Great recipe! Brought it in to work to share and everyone loved it. Will be making this again and again. I added one more tomato to the mix to make it a little more chunky, but other than that, I followed it exactly. Great as a dip or perfect for use in Mexican dishes as it helps cut back the calorie and fat content!

Savory Pork Roast

Wow...so easy and simple, yet such an amazing taste! I followed a few of the recommendations and added a bit of olive oil to my spices first. This went over very well! The leftovers were great too!

Roasted Rosemary Chicken And Vegetables

Great recipe. Chicken tastes great with the marinade. You can add whatever veggies you like. I added what was listed, as well as cremini mushrooms and broccoli, plus I used zucchini instead of eggplant. I served it with a quinoa pilaf....great meal!

Curried Tofu with Pasta

This recipe is perfect when you want something quick and easy but with lots of flavor. The browned tofu is delicious in the recipe. I use light coconut milk instead of the regular when I make it. We have made this recipe many times. I will try it with my own sauce sometime too but it is nice to have the ready made sauce too when you need something quick!
