Oatmeal Chocolate Chip Muffins

I'm giving this a five star rating because it took me only a few minutes to whip up a batch. The first batch turned out beautifully and as soon as the first batch came out of the oven, I immediately started on the second batch, just so I could share these with friends that I was meeting for morning coffee. Out of my excitement in seeing the first batch and making the second one, I forgot to sprinkle brown sugar on top of the second one before placing them in the oven. But, they turned out as wonderful as the first one!! I will definately make these again. Oh, I didn't have any pecans...so I didn't put any in the muffins. Wonderful, wonderful muffins!!!!

Buttercream Icing

Just what I have been looking for in a buttercream frosting. I didnt have any shortening, so I used all butter and it turned out fantastic considering the fact that I halved the recipe (because I wasnt too sure how it would turn out and I didnt want it to go to waste) I was pleasantly surprised at how wonderful it turned out. I managed to frost 40 mini cupcakes.just be sure to beat the frosting at high speed until it becomes really fluffy. A keeper, most definitely! !!

Chocolate Chip Muffins

i give it four stars because it was really easy to make but there's something about the taste and texture that's a bit...'weird'. it's not exactly like the texture of a muffin, but it's not of a cupcake/cake either. the taste, i feel, was saved by the sprinkled sugars and also the extra mini chips i sprinkled on top. had i not sprinkled anything on top then the taste would be a bit on the bland side. i would definitely add a bit more sugar to the mixture. i also added some plain yogurt (because i ran out of sour cream) to make it a bit moist. here's a question though, how different is it from NORA'S SPECIAL CHOCOLATE CHIP MUFFINS, because i compared the ingredients and they were EXACTLY the same...hmmm...

Unbelievable Rolls

OMG!!! This is a wonderful wonderful recipe! It lives up to its name. It was my first time ever making bread and they turned out really nice and soft. I would definately make them again.
