Santa Fe Chicken Saute
Yum! I was looking for something simple and easy to do with chicken and beans that wasn't taco soup and this is it! I cut up the chicken and guesstimated on the amounts but otherwise left everything as written in the recipe. I served it over white rice (all we had) and my husband and I loved it. Our 4 year old wasn't as big of a fan, but at it anyways. We will definitely make this again.

Chicken Cordon Bleu II
Yum! This was amazing, although I did make a few changes. Like some previous reviewers, I pounded the breasts flat, but not flat enough. I also added a little stone ground mustard to the pan when I added the wine, and sliced up a little extra swiss to mix in with the sauce at the end for a little extra cheesy goodness. I didn't add a single spice, not even salt or pepper and it was super delicious. We will definitely be making this again.

Sausage Egg Muffins
Yum! My husband is doing no-carb but my daughter and I still eat carbs. Finding a breakfast we can all eat has been a bit of a challenge but these little muffins are just right. We added a little extra cheese because you can't have too much of that but other than that they were great. We may mix up the meat used, too. Bacon would be tasty. This only got 4 stars because cleaning the muffin pan was a huge pain. We might try muffin cups next time.
