I lighten this up by omitting the margarine and sauteeing the onion in non-stick spray. I also use light smoked sausage, light processed cheese and fat-free evaporated milk. The day I made this, my potatoes were smaller than usual, so my soup was thinner than I liked. I omitted one of the cans of milk and still needed the cornstarch. Let's just say this was extra cheesy!
