Italian Style Flounder

Came out really well and was super easy to make! The only 'effort' was chopping tomatoes...and it was such a small amount that was needed. I halved the recipe though--for 4 servings, 2 pounds of fish is a lot. Family gave 'two thumbs up.'

Farfalle with Asparagus and Smoked Salmon

Really good and easy to make! I took a lot of liberty with this recipe...used more than half a pound of fresh salmon and mixed it with a bit less pasta than recommended. I think the lemon added a lot of flavor. Also, it was served warm. Will definitely make again...

Spicy Spaghetti Squash

Good! Took a lot of time to prep, usually I make dishes that take less time to take. My husband and I didn't have any leftovers. I doubt I'd make it again and I'd definitely recommend giving it a try. I used diced tomatoes instead of crushed (one can), a whole package of ground turkey, all dried spices, no capers, and leeks instead of an onion. .

Shrimp Scampi II

The shrimp came out great, but I made serious modifications...didn't have any lemon juice so I used some limoncello out of the freezer (2+ tablespoons), didn't fry the shrimp (sauteed in EVOO and then added them to the sauce at the end), halved the butter, used dried parsley. Served with brown rice and broccoli...I'd definitely make it again!

Shrimp Fettucine

Lite Carrot Cake

Yum! It was slightly undercooked at 30 minutes, but still yum. Used regular flour since I couldn't find the fancy stuff. Also added more cinnamon (1/2 tsp), nutmeg (tsp), and ginger (tsp). Oh, and I used 3 large carrots -- way more than 1.5 cups. It went really fast at work!

Cranberry Dip

It was a great hit at the party! There was a lot of dip compared to the cream cheese though, so I'm not sure it looked great, but it tasted wonderful. I made it exactly as per the recipe (except I didn't let the cream cheese warm enough).

Chickpea Salad

great and super easy! i didn't have an onion on hand and i used a whole cucumber. i also only added 1/4c of liquid (half white wine vinegar and half balsamic vinegar). maybe it was my substitutions, but it could have used some more salt. i will make this again!

Lemon Chicken Tenders

yummy, but it was so messy to make! i dried the chicken like was recommended and i sprayed the nuggets with PAM before i put them in the oven, it came out A-OK. next time, i would have two bowls for the breading because it became a soggy mess at the end. in terms of the sauce, i used half the sugar, no curry, 1/8tsp paprika and 1/8tsp ground mustard. it was good but i would use more sugar next time. husband liked it and i'll make it again.

Slow Cooker Bananas Foster

I can still taste the yumminess...other diners recommended to try to keep the bananas whole (I sliced lengthwise and then once in the middle). Also, I kept it on 'warm' for an extra 1.5hrs and the bananas seemed to be cooked. Followed the recipe as prescribed and it's definitely a keeper recipe!

Bread Pudding with Whiskey Sauce

Really good! We halved it and needed to substitute in peaches and pears, pumpkin spice for nutmeg, and heavy cream for whole milk. We also made a quarter of the whiskey sauce -- note: do not store the whiskey sauce in tupperware and reheat it in the microwave.

Easy Honey Mustard Mozzarella Chicken

Few modifications -- no bacon, used 2 boneless, skinless breasts, some leftover chicken from the previous night, and two veggie burgers! It still came out great. One person does not prefer chicken, but he said that this recipe was the best way that chicken could be prepared (that's a compliment).

100 Percent Whole Wheat Bread

This was my first time attempting bread and it came out great! I didn't have the flax seeds (added a bit extra flax seed meal) or the coconut oil (substituted toasted sesame oil) and needed to add a bit more water to get the dough to form. Tried to use my kitchenaid mixer but ended up just making it smoke -- so did all kneading by hand. I didn't knead for full times because I got tired, but it still came out great. The bread was a big hit and now I'm going to use it for french toast.

Tangy Shrimp and Scallops

Awesomely easy and great tasting. Just need the marinating time. I used a 2lb bag of fzn shrimp and 1lb bag of fzn scallops. Only things - the sauce was really hot when I poured it into the seafood and cooked some of the shrimp a bit but I don't think it affected the taste. The sauce also congealed in the fridge and so skewering was very messy. I forgot about the 1/3 sauce for basting and so now we have some great marinade for chicken tonight. Will definitely make again!

Lentil Quiche

Came out great! As usual, I made some changes based on what I had in the house and preferences -- no onion/olive oil, no tomatoes (based on recommendations, served with salsa instead), and basil/oregano/parsley instead of Italian seasoning. For the cheese, I used 3 slices of 2% cheddar cheese and placed it on top. My husband ate half for lunch. We loved it and I will make again.

Sexy Shrimp Scampi

Skipped the butter, didn't measure out the other ingredients, and it still came out fabulous! added broccoli and baked the shrimp/broccoli together, served over quinoa.
