Strawberry Spinach Salad I

Made this salad for Father's Day and I improvised. No sesame seeds this time in the dressing but I used half the sugar, added salt, balsamic vinegar instead plus doubled Worcestershire. I also added fresh blueberries. Everyone loved it!!! Even my super picky son in law who NEVER eats spinach ate a whole bowl!!! I consider this a victory for me! It's the second time I made it and it got rave reviews first time also. Only one thing, only make enough for the meal, leftovers don't do well at all. Next time I will add some other add ins mentioned in the reviews. Thanks so much!!

Black Bean Vegetable Soup

Great base recipe, here are my revisions. First, added diced celery, bell pepper, extra garlic and like others, doubled up on the cumin. Used frozen corn and ended up blending only 1/2 of the tomatoes, (we like it chunky). After blending the beans it was still too watery so I added what ended up being the whole package of my dried, cooked black beans. It was probably like 3-1/2 cans of beans. Superb! Very good, we will make this often. Healthy and economical. DH loved it!

Microwave Baked Apples

Tried this recipe tonite, used Rome beauties, and yes they came out squishy but yummy after 4 min in a 700 watt microwave. I used 1 tsp. of coconut butter for each apple, dried cranberries and about 1 tsp of Splenda also. Sprinkled with a good amount of pumpkin pie spice, I didn't measure, sorry. Lastly, I put in 2 tbsp of water to make a light sauce with the drippings and it did not disappoint. Made a great light dessert that was lightly decadent but not over the top. Next time will use gala apples, my favorites. Yummy!

Sugar Cookie Glaze

Very nice glaze as it is written. Used colored gels and liquid colors very effectively. Just adjust water to consistency you want. Hardened up nicely after a while. I would make this again. Thanks!

Nanny's Spaghetti Sauce

Threw this together with what was left in the cupboard. Changes: used 1 14 oz. stewed tomato can, sauteed diced onions with garlic before adding tomatoes. Used about 2 tbsp. Italian seasoning and 1 or 2 tsp dried basil, and 1-1/2 tsp salt. (used 1 8 oz. can unsalted tomato sauce.) The red wine vinegar gave it a great taste. I simmered for about 1/2 hour and got a huge amount, enough leftover to use for a pizza base sauce. Will definitely make again in the crockpot along with chicken and no pasta! Yummy.....

Cinnamon Raisin Swirl Bread

Awesome bread! I doubled the filling recipe and used my Kitchenaid instead of a breadmaker. Left plumped raisins for the filling. I loved the not so sweetness of the bread and used bread flour for the first time instead of AP flour. What a difference in texture! Loved it and will make again. Saving a loaf (that's hard!) for Sunday a.m. breakfast.......

Peach Cobbler VI

Doubled the batter recipe, used the better part of a 6 lb. can of peaches I got a good deal on. A good 4 lbs of peaches, cut them into large chunks. Baked for a longer amount of time because I doubled recipe. Almost an hour at 350 til toothpick came out clean. Came out very, very golden and tasted awesome! Took it to family Easter, almost all went! I will definitely use this recipe again, great flavor and so easy! Thanks, Karen !!

Butternut Squash Soup II

Loved it! Very subtle flavor, so added curry, ground cumin and cinnamon. Added just pinches, don't overspice. Skipped cayenne, don't like heat. Also added 2 cloves minced garlic. Turned out fantastic, served with grilled ciabatta bread, a very filling soup. Velvety. Thanks for my new fave soup!

Aunt Anne's Coffee Cake

It's a pretty good cake, except that it's not as tall as I would like it. So a smaller pan would be in order. I did like others and doubled the struesel topping, which was just enough for our taste. I don't know if I will make it again, though. There are so many other recipes out there. Not bad, though.

Awesome Slow Cooker Pot Roast

Made this for Christmas Eve dinner with a few modifications. Seared in olive oil after coating in flour and sprinkled with Lawry's seasoning salt. Added only 1/2 of the water called for and cooked on high for 9 hrs in crockpot. (I must have had a larger roast). When finally done, it had lots of gravy so when I shredded the meat it all soaked in. Family LOVED it, tons of leftovers. Daughter took some home to make nachos with it. Will definitely make this again and experiment with other ingredients just for fun. Thanks for a great recipe!

Jewish Apple Cake I

Great recipe. I used part brown sugar for this and 1/2 cup oj and 6 macintosh apples. Since I used a Bundt pan and the top would not be visible, I used the marbling effect when adding the apple mixture. Delicious, got many compliments, will make again!

Sophie's Zucchini Bread

I'm not sure what the problem was but this bread was dry. Believe it or not 1 whole cup of oil was not enough to remedy that problem. The only other different thing I did was use a large, mature squash but it was moist enough, I thought. I will not make this recipe again.

Pumpkin Puree

Used a 12-15 lb medium sized jacko-lantern pumpkin and just boiled it. Scooped out flesh and put in colander to drain and pressed down until most liquid was gone. Put into food processor and made very nice pumpkin butter and empanada filling. Put well drained pulp into freezer bags. I will not stop buying canned pumpkin but will never toss out another carving pumpkin ever again. Saves $$.

Yummy Sweet Potato Casserole

Made this the day before Thanksgiving. Substituted 1/4 cup orange juice for milk, used brown sugar instead of white in the yam mixture. YUMMY!! Husband loved it and so did I. Will definitely make every Thanksgiving from now on.

Jo's Rosemary Bread

I made this originally for bread without a machine, but ended up as a pizza crust. I ended up taking off the toppings and enjoyed the lovely, fragrant bread. We did recognize the taste as Macaroni Grill's bread, yummy. Will make next time as a loaf, it's outstanding and so easy to make, even manually. Thanks!!

Carrot Cake III

I made this for Easter and my husband said it was the best carrot cake he'd tasted. I put in half brown sugar and half white granulated to total about 1-1/2 cups. 1 extra tsp. vanilla, 1/2 tsp. more cinnamon and 1/2 tsp nutmeg and used walnuts. Since I am lactose intolerant I used "tofutti" soy cream cheese for the frosting, along with only 2 cups of sugar. It was not overly sweet, just right. That's why my dh loved it so much. Thanks for a great recipe. A keeper.

Hummus III

This was my first time making hummus, used less than 2 cups of chickpeas and less of all other ingredients except garlic. Pretty much used halved amounts of ingredients, but garlic was way too spicy for me. I will continue to experiment with adding other spices, veggies, etc., but did use the liquid drained from can to smooth out the hummus. Served with Stacy's baked multigrain pita chips. Healthy recipe.

Grilled Salmon I

Made this tonite for dinner, husband and I loved it! Made a few changes: I did use a 2.5 lb. of fish but kept the same amount of ingredients. Omitted the salt, didn't need it with soy sauce, no lemon pepper, just 2 squeezes of fresh lemon juice and next time I will try fresh garlic. Also used my skillet/grill on the stovetop and the carmelization was so tasty. Will definitely make regularly.
