I've made this recipe twice. The first time I substituted applesauce for the oil, and about 1/2 c of the flour for whole wheat flour. It was a bit heavy (as whole wheat flour tends to make things) but very good! The second time I made it exactly as is (except no raisins) and it was good as well, however it calls for WAY too much oil. After mixing it and putting it in muffin pans, there was oil sitting in the bottom of my mixing bowl. Will definitely continue to substitute applesauce. The cocoa hides the zucchini from my kids better than other recipes I've tried. Thanks for sharing!
