Bacon and Cheddar Stuffed Mushrooms

Reviewed: Oct. 17, 2010
Good. My hubby liked them. I did use 3 cheeses (parm, cheddar and mozzarella), everything else was the same. I am absolutely in love with cheese but I felt I need to add something else to brighten up the flavors. When I find what that is I could give this 5 stars....but then it wouldn't be the same recipe hehe.

Pecan Squares Cookies

Reviewed: Oct. 7, 2010
Tastes like Pecan Pie, only you can hold it in your hand. I cut back the recipe to 18 servings and cut back the corn syrup to 3/4C because of what others said in other reviews. I don't like things too sweet and some reviews said it was too sweet so I cut back the sugar to 1/2C instead of 1C, but I could go with 3/4C. In the end I drizzled them with a little melted chocolate. Super yummy!

Applesauce

Reviewed: Sep. 19, 2010
Great recipe and tastes great! This was super easy and a great way to use up some apples that were on their last leg. I only had 1 lb of apples so I just barely covered with water as the written part of the recipe states and add just a little under a 1/4C of sugar (I just added a few teaspoons of sugar to taste approx. 1/4C) and the juice of 1/2 of a lemon. I also added a couple of cinnamon sticks. Will definitely make again.

Chocolate Macaroon Cupcakes

Reviewed: Aug. 22, 2010
I give it 3 stars because I used a boxed chocolate cake instead of following the recipe, but used the filling as shown. They were nice and quick to make for the quick sugar fix I craved at the time.

Marinated Cucumbers

Reviewed: Aug. 18, 2010
This a great refreshing recipe for my overwhelming cucumber garden. I changed the herbs because I didn't have them all ... I used oregano & garlic powder as stated and subbed a vegetable seasoning & herb de provance. I added the sugar to taste which ended up being 6 coffee teaspoons and I left out the onions because I'm not a fan of raw onions and the ground mustard because I didn't have any. I only used 2 cucumbers and the full recipe for the dressing. When we ate it and liked it I chopped up some more cucumbers and put them in and let them marinate in the fridge for our next dinner.

Jalapeno Pepper Appetizers

Reviewed: Jul. 28, 2010
Pretty good. I can see the potential in these. What lacked in flavour was the cream cheese filling. Next time I'm going to add some herbs or spices to the cream cheese. Will make again. And we love spicy food and after cleaning out the seeds and "white spines" I didn't find it all that hot, but had a nice kick.

Antipasto Squares

Reviewed: Jul. 25, 2010
This is great and quick. Everyone at the party I brought it to loved it. I changed it to my taste using mozza and provolone. Cold cuts I used were Genoa salami, cooked ham and prociutto salami. I added Italian seasoning to the egg mix with parmesan and add all of it to the cold cuts. I mixed some olve oil and oregano and brushed the top of the cresent rolls with it and then sprinkled more freshly grated parmesan on top. It was great and I can addapt it to any flavor concept I want.

Low Sugar Strawberry Rhubarb Crunch

Reviewed: Jul. 18, 2010
Very Good. Changed it a bit as I always do, added 8 packets of sweetener along with the honey and 2 tbsp of cornstarch to the strawberries and rhubarb. Also added some slivered almonds to the crust.

Tennessee Rubdown

Reviewed: May 4, 2010
Excellent! We use this on our ribs and have used it on pork roasts and shoulders. It makes a lot so we are careful to not contaminate the rub and store it in an airtight container or a ziploc with as much air removed.

Sarge's EZ Pulled Pork BBQ

Reviewed: May 4, 2010
For a quick dinner this is a pretty good recipe. Followed the recipe except I rubbed a rib rub from this website (Tennesee Rubdown) all over the pork instead of the salt and pepper. At the end took out the pork and poured the drippings/stock into a measuring cup and tried to remove as much fat. I shredded the meat and put it back in the slow cooker on warm and added some bbq sauce (C&C BBQ) and some of the liquid. Served on hamburger buns with some baked beans.

German Apple Cake I

Reviewed: Oct. 11, 2009
Excellent cake with an excellent texture. It is moist and dense inside with a slight crispy exterior. Great out of the oven, but still great at room temp. I did make a few minor changes to adapt to my preferences; I decreased the sugar to 1 1/2C and used brown sugar instead of white and increased the cinnamon to 3 tsp and vanilla to 2 tsp.

Warm Mushroom Spread

Reviewed: Sep. 4, 2009
Great spread! I halved the recipe because I didn't have enough mushrooms on hand and I didn't have enough sour cream so I added 1/4C of marscapone cheese. It turned out well. Served it on crostini. I will definitely make again.

Garden Fresh Tomato Soup

Reviewed: Sep. 3, 2009
I doubled the recipe and I tried the soup as the recipe stated up until the thickening process. It tasted good enough but I decided to add some other ingredients. I found I wanted a more tomato punch so I added 2 tbsp of tomato paste. I also added some fresh basil at the end of the cooking time and a clove of garlic to the onion/tomato/broth mixture. I didn't thicken the soup I left it as it was and it was a very nice fresh soup. I gave it 4 stars only because I added other things but the soup as written is very good as well.

Torta Rustica

Great! Crust is wonderful. The possibilities of fillings is endless. I think I will try some sausage next time and leave out the ham and spinach. It is filling and can feed quite a lot of people.

Eggplant Rollatini

Reviewed: Aug. 25, 2009
Very Good. I added some parmigiano regiano to the bread crumbs. Next time I will use a sausage or ground beef mixture instead of the prosciutto. It was very good with the prosciutto I will probably add some roasted red peppers next time as well. Served with rice balls instead of a pasta, great filling dinner.
