Ultimate High Altitude Chocolate Chip Cookies

I made these the first time following the recipe exactly and the cookies looked great in the oven, but then fell flat. I live in suburban Denver at about 5700 feet. The next time I used 1/2 butter and 1/2 Crisco. I also used fresh baking soda and made sure not to overmix. Baking soda is only good for about a month. The results were much better and tasted great. This is a great recipe, but you still may have to experiment a little to get the results you want.

Apple Pie by Grandma Ople

I have made this several times now. It has been a big hit every time. Eight apples may be too much depending on how big they are. I usually buy large Granny Smiths and five of those are perfect to fill a 9inch deep dish pie plate. I always add 1 Tbsp. vanilla to the sauce. Be sure to remove 1 Tbsp of the water from the 1/4 cup water to compensate for the liquid from the vanilla. I also add 1 tsp. cinnamon, and 1/2 tsp. nutmeg to the sauce. I like to cover the apples with the sauce before putting in the pie plate. Remember to save some of the sauce to pour over the crust. I also cover the edges of the pie with thin strips of tin foil. This prevents the edges from getting too brown. Remove the foil when you have about 10 minutes of cooking left. I do like the looks of the lattice crust, but it is just as delicious with a solid top crust. Just make some decorative cuts in the top.
