Crustless Spinach Quiche

This was great! I added the suggested fresh minced garlic and some cubed ham. Baked it in muffin tins, they were gone fast.

Roast Sticky Chicken-Rotisserie Style

Absolutely wonderful. Didn't have the garlic or onion powder so I minced up fresh and rubbed it on with the spices. The meat was so flavorful and tender, I couldn't believe it. And the carcass made a wonderful stock. Will make this again and again.

Perfection. I doubled the recipe and filled them with the cheese filling recipe off this site. I did have to bake them for close to 20 minutes though, not 10-12.

Pumpkin Pancakes

This recipe is really delicious and really forgiving. I wanted to make something different and I had pumpkin in the pantry, so I tried it and I'm so glad I did! I added some chocolate chips which I didn't feel all that bad about since there is very little sugar. Wonderful! My 2 year old is gobbling them up as I type.

This is really good! I used one can cannellini beans and one can black eyed peas (because that's all I had). I also added a pinch of cinnamon to cut the acidity and bring out the sweetness a bit. Served it with whole wheat penne pasta, my boyfriend and 2 year old gobbled it up!

Homemade Black Bean Veggie Burgers

This is DELICIOUS. I swear, it is wayyyy better than storebought! I don't have a grill, so I did things a bit differently than some of the other reviewers. I did let the beans dry a bit after rinsing them and tried to get most of the moisture out of the onion, red pepper, garlic and pinch of cilantro that I roughly pureed with my immersion blender. One can of beans wasn't enough, so after mixing everything together, I added half a can of organic refried black beans. I didn't have breadcrumbs so I added a half a cup of cooked short grain white rice and about 1/3 cup of flour. I greased some aluminum foil and baked them on each side for 10 mins as suggested. To crisp them up, I put them in a pan on the stove with a tad oil for a few minutes before serving. AWESOME served with a side of chipotle mayo.

Chocolate Chip Oatmeal Cookies

These were pretty good, I definitely recommend making small cookies (because bigger ones tend to burn on the bottom and stay uncooked in the center)and lowering the baking temp to 350 degrees. They tasted kind of eggy, but my boyfriend liked them a lot. I wasn't crazy about them, and I probably won't make them again.

Kristen's Awesome Oatmeal Cookies

yum!!! i was afraid it wouldn't make enough, but i added about a cup more oats, a cup of chocolate chunks and half a cup of raisins, and they're great! Oddly enough, I was also out of cinnamon and almost out of vanilla, so i used 4 tsps of pumpkin pie spice, the little vanilla extract i had (1/4 tsp) and about a tsp of almond extract. I decreased the salt too, to 1/2 tsp, but now i think that probably wasn't necessary.

Slow Cooker Vegetable Chili

Wonderful! I love crockpot recipes that are forgiving like this one, you can pretty much throw in whatever you have on hand. I sauteed the onions first in olive oil with some garlic (because they get weird if I don't) and added 2 big diced zucchinis to the pan for a few minutes before throwing it all in the crockpot. I threw 3 cans of beans in (2 drained, one undrained)(kidney, black and pinto), nixing the garbanzo beans. I only used 3 TBLspoons of chili powder, but doubled the oregano and cumin because I love those two together!! It came out amazing, so delicious. This is my go to chili recipe from now on.

Zucchini Bread II

YUM!!!! The best zucchini bread I ever had. I took it to family dinner and there were no leftovers. To spice it up a bit I added a pinch of shredded coconut, some currants, some cashews and some almond extract. Everybody loved it, I think I'm going to make it again tonight and keep it at home for me and my little family!

Not my favorite. Very obviously low fat. I would rather eat one real cookie than 4 low fat ones. They were ok when they first came out of the oven but now I can't give them away, no one wants them.

Apple-Stuffed Acorn Squash

Amazing! Everyone loved it, even the youngest (18mos.) who ate two bowls. followed basic instructions except for rubbed the halves with brown sugar like someone suggested, and didn't melt the butter (we used a vegan variety), the oven melted it for us.

Squash Stuffed Chicken Breasts

Very good except for we entirely changed the recipe! We used yellow squash in place of the acorn and added broccoli instead of the celery. It was really really good!! Everyone loved it.

Simple White Cake

Kind of disappointed me a little bit. It was decieving because it looked absolutely amazing, but after I frosted it and served it at Thanksgiving for 3 family members' b-days, I noticed people only eating half their slice because it was so dry. I added more milk like many reviewers suggested, but I guess it didn't help much. Will continue searching for a good white cake recipe.

Broccoli Chicken Casserole II

Oh my goodnesssss!!! SOOOOO delicious!! I made some changes though...I followed the suggestions to add pasta and I added organic, whole wheat rotini, which went with everything else so well!! I also substituted the cream of chicken for a substitute recipe for cream of soup I found on about.com (because I didn't have any cream of chicken). I also crumbled some organic wholefoods crackers on top. I only made a half batch though because it was just for me and my hubby, but I wish I would've made for as he has already eaten 2 helpings! Will make again for sure!
