Easy Tortellini Soup

Excellent and SO easy! Made this when I was tired and didn't want to be in the kitchen -- it came together quickly and was a huge hit! I didn't have zucchini but it was still great -- I followed others' suggestion and added a bit of fresh basil at the end.

Grilled Sweet Potatoes with Apples

This was YUMMY! I didn't have any apples so I tossed in some applesauce and also used brown instead of white sugar. I also microwaved the potato slices until they were slightly tender to cut down on the grilling time.

Dutch Potatoes

This is fantastic -- a great change of pace from regular mashed potatoes and everyone has loved it. My only change -- I added at least another teaspoon of salt. I'm thinking next time I'll add some fresh chives too!

Black Magic Cake

I made a low-fat version and it was JUST as good as the original -- which is the BEST chocolate cake I've ever made! I substitute Fat Free Mayo for all of the oil; used Egg Beaters instead of eggs and skim milk -- truly -- my husband could not tell the difference!

Butter Bean Burgers

FANTASTIC! I triple this recipe and make about 8 very substantial burgers. I've substituted chick peas and/or combined chick peas with butter beans -- all works great!

Sour Cream Coffee Cake

I gave this 5 stars WITH the changes suggested by others plus a few of my own: I doubled the topping; baked in an 8X11 pan; added sliced apples in center with topping. I didn't like that the topping was so dry so I ended up drizzling with 3 T melted butter after it started baking. Very moist and delicious -- great texture!

Coconut Curry Tofu

Never cooked with tofu before but this was amazing and we all loved it! Only thing I'd do differently is add more curry -- we like a bit more 'kick'.

Lemon Orzo Primavera

Awesome stuff that the whole fam loved -- just be sure to double this recipe! There are four of us and we were fighting over the last little bit! Next time I'll add some more veggies. I also added 1 c white wine with the orzo -- nice!

Florentine Curried Chicken

Awesome recipe and very easy! I substituted fresh spinach just because I had some I needed to use up before it went bad -- worked great! I did double the curry and paprika also. I'd eliminate the cheese because you couldn't even taste it or tell it was on there. Also, I'd make rice as there was tons of great sauce and nothing to put it on!

No Bake Double Chocolate Coconut Pie

Absolutely wonderful pie -- great for hot summer days when you don't want to heat the oven! Only thing I did differently is increased the milk from 1 1/2 cups to 2 cups when mixing the pudding part. With 1 1/2 cups it was very 'grainy' but the extra 1/2 c milk gave it a smooth, creamy texture and still set up perfectly!
