Cream Cheese Blueberry Pie

Mine turned into a soup mess. I used frozen blueberries, but tried to compensate for the extra liquid - still way runny. I was hoping it would firm up, but it never did. The cream cheese portion also tasted gritty after a day.

Ham and Cheese Puffs

Very easy to make with what I had on hand. I had ham left over from the Holidays. I used about 2 1/2 cups of chopped ham. I tried two batches - one for the kids just as the reciped is and then added red pepper flakes for the adults. Both turned out great. I used dried onions that I bought at Costco (1/4 cup). If I chop onions up next time I may add garlic. I think that chopped jalapenos would also be a good addition.

Brown Sugar Oatmeal Pancakes

My kids loved them. I was looking for a pancake recipe with Old Fashioned Oats and found a great one here. I added a Tbl of vinegar to the milk and left it alone while I mixed the dry ingredients since I did not have buttermilk. I also added a few sprinkles of cinnamon as someone else mentioned. Will make again!!

Banana Muffins with a Crunch

My family LOVED this recipe. My husband, 2 yr old, 5 yr old and me. Didn't have granola so I substituted oatmeal. I made both med. size cupcakes (20 min. was perfect) and made mini cupcakes - cooked for 18 min. Will be making again!!

Cheryl's Spinach Cheesy Pasta Casserole

Yummy!! My whole family even my picky 2 year old loves this recipe. It has been an easy way for me to sneak vegetables in my kids diet. Some nice additions: -Don't layer it - just mix it all together. This way you can just freeze it for later in the week. -Sautee some onions, garlic and mushrooms to add to the mix. Have made it once a week and my family still gobbles it up!
